Besan Laddoo

Besan laddoo is one of the most popular delicious Indian sweet across all over India. Besan (gram flour) laddoo made with ingredients like roasted besan, ghee or butter, sugar and flavored with green cardamom powder and pistachios. Besan laddoo is all time favorite of my kids. The aroma of roasted besan is awesome. Normally, the sweets like laddoos are made on special occasions like Diwali, Ganesh chaturthi and other festivals, however you can make any time. The recipe for besan laddoo is very simple and easy. The most important part of recipe is right level of roasting, consistency and texture of the mix. The texture of the besan ladoo is soft however you could still feel the granularity of roasted besan. You could share laddos as gift pack to family & friends and it could last for about a month.

Instructions
  1. In a mixing bowl, add besan, milk and 2 tbsp unsalted melted butter or ghee. Mix it well using your hand and rubbing motion between your palm for about a minute or till it gets grainy texture. If you are using laddoo flour from an store then this process is not required.
  2. Heat a heavy bottom pan at medium heat. Add 1 tbsp butter and besan mixture. Roast the besan by stirring continuously using a rubber spatula. During the roasting process break the besan which gets crumbled using the spatula. During the roasting process maintain the temperature between low to medium.
  3. Roast the besan till slightly golden color in about 20 minutes. Turn off the heat when it gets slightly golden color and aromatic. Besan should be is slightly under cooked. Turn off the heat, remove the pan from stove and break the crumbled besan. The besan crumbles while it is getting cooled and also gets more cooked from it's own heat during this process, stir it continuously till gets cool.
  4. Let it completely cool down. Add sugar, cardamom powder and mix it well. If you do not have granulated sugar, first grind the regular sugar to fine granules using a grinder.
  5. Grind the mixture in a food processor nicely.
  6. Transfer it in to a bowl, add 1 tbsp melted unsalted butter and mix by hand.
  7. Grease your palm with ghee or butter. Take some besan mixture and make a laddoo. In case, it keeps on breaking, add 1 tbsp butter and mix again. Please do not add too much butter otherwise it won't get right consistency and texture.
  8. Make all laddoo following the same process. You can make big one or small one as per your choice.
  9. Delicious Besan Laddoos are ready to be served.
  10. Garnish with grated pistachio and celebrate your festival.
  11. Laddoo can be served as a snack or dessert.
  12. This laddoo could be make for any occasions and used for worshiping the GOD.
  13. Besan laddoo can be stored in airtight container for a month.
