Daal Baati

Daal Baati Churam is a very popular traditional Rajasthani dish. The celebrations like marriage, festival, parties and so on in Rajasthan are incomplete without this traditional dish. Daal Baati Churma is basically three items put together as a meal. I have already shared the recipe of Churma in my earlier blog and in this blog I am sharing the recipe for Daal and Baati. Baati is made from wheat flour balls with lots of deshi ghee. Traditionally, the Baati balls are backed in clay or coal based tandoor which gives a very specific smoky flavor to the recipe. However, I have made the Baati in electric oven and it really came out well. The crispy Baati with desi ghee aroma makes the dish tastes amazing. The Daal for this recipe is mixture of five kinds of daal (pulses) also known as panchmel daal. The daal is cooked with salt, water and turmeric powder however the seasoning with ghee, ginger-garlic and some gram masala brings in the real flavorful taste in Daal. Serve this recipe to your guests and I am sure they would love it.

  1. Mix all the five types of daal in a bowl and clean using water for about 2-3 times.
  2. In a pressure cooker, add the clean daal mix, 6 cups of water, turmeric powder and salt. Cook at medium to high heat, until one whistle then reduce the heat to low to medium and let it cook for about 3-4 whistle. Once its done, turn off the heat and let it cool down naturally.
  3. Meanwhile start preparing seasoning for the daal. Heat oil and ghee in a deep pan or kadhai at medium heat. Once its hot, add cumin seeds and wait till it gets brown. Add bay leaves, red chili and sauté it for few sec. Add chopped ginger-garlic into it and sauté till ginger-garlic gets golden color. Add chopped tomatoes, little salt and hing. Sauté till tomato gets mushy.
  4. Add 1/4 tsp turmeric powder, garam masala and sauté it few sec.
  5. Add boiled daal in to it and stir nicely. Once it comes to boil turn off the heat and squeeze some lemon juice. Keep covered for 10 minutes.
  6. Delicious daal is ready for baati. Serve it hot with Baati.
For Baati
  1. In a mixing bowl, add wheat flour, rava, salt, baking powder, baking soda and ghee.
  2. Mix all ingredients by hand nicely till it gets the crumble texture.
  3. Add milk and make a nice soft dough. Knead it very well using hand or hand mixture till soft. Cover and keep it aside for 20 minutes.
  4. Pre heat the oven at 350 degree F in baking mode. Make equal size small round balls.
  5. Place the balls in to preheated oven and let it bake for 20 minutes. After 20 minutes flip all the baati to other side and let it bake for 15 more minutes.
  6. Before taking out, change the setting to broil in oven and let the baat get nice golden color. Please keep an eye to ensure it does not get burnt. Cracks appearing in baati indicates that it is cooked and you can take it out from oven.
  7. Turn off the oven. Remove the baked baati from oven.
  8. Dip into melted ghee one by one while baati is still hot.
  9. Put in to pot and keep covered to avoid it getting dry.
  10. Yummy hot hot baatis are ready to be served.
  11. Serve it hot with daal and churma. Enjoy super delicious daal baati and churma as a lunch or dinner.
