Eggless Chocolate Banana Cupcakes

Chocolate banana cupcakes are all time favorite of my kids. Normally cakes or cupcakes are made using egg but this recipe is egg-less, The recipe uses flax seeds and condensed milk as a replacement for egg which compensates the absence of egg in cake and makes it moist, soft and spongy. Banana gives the cake a wonderful moist texture and tender crumb that keeps the cake soft even when refrigerated. This would also be the perfect cupcake for family gatherings.

Instructions
  1. Sift all the dry ingredients using big strainer.
  2. Preheat the oven at 350 degree F in baking mode.
  3. In a mixing bowl, add condense milk, room temperature butter, vanilla extract & sugar. Mix it using hand mixer at low to medium setting till all gets mixed evenly . Add mashed banana and mix again.
  4. Add flour slowly to the mixture and mix is using the hand mixer. Add curd and mix it again. Ensure the batter is neither very thick or very thin.
  5. Line cupcake tray with paper liner.
  6. Equally Pour the cake batter in cupcake mold.
  7. Place the raw cupcake mold in hot oven on upper rack. Let it bake for 25-30 min. After 25 min, check the cupcake with wooden toothpicks. If it come out clean, means it done. Don't bake for long time otherwise it will gets dry. Turn off the oven and remove it from oven and let it cool.
  8. To make whipped cream frosting, In a mixing bowl, add 2 cup chilled heavy whipping cream, 1/3 cup icing sugar and vanilla extract. whisk it with hand mixture at low setting till it gets stiff peaks form consistency.
  9. Decorate the cupcake with whipped cream frosting. Sprinkle some sugar candy on it or decorate it your own way.
  10. Eggless cupcake is ready to be served.
  11. Serve it to your kids as dessert or snacks.

  1. I don’t have flaxseed powder…how much egg do I need to use it in that place?and can we make whipping cream by amul cream? ?thank you for the awesome recipe…take care

    1. You could use 2 eggs for flax seed. You can use Amul cream however it needs to be processed, you need to refrigerate the cream overnight. Then in a chilled bowl take out the thick part of the cream. Whisk it using hand blender.
