Kaju Pista Roll

Kaju pista roll is a famous Indian sweet and loved by all. This rich recipe is very delicious so be cautious while eating too much of it. The recipe is easy to make and can be prepared quickly.This is generally made on festive occasions.

Ingredients
For Kaju ( cashew nuts) rolls
For Pista roll
Instructions
  1. Ingredients for kaju (cashew nut) Roll. Dry roast the cashew nuts and pista separately at low to medium heat for 45 sec. Remove from the heat and let it cool. Make a cashew nuts and pista powder separately. Keep them aside.
  2. In a deep pan, add sugar, saffron threads, rose essence, cardamom powder and 1/4 cup water. Boil it until one thread consistency.
  3. Add cashew nut powder and mix it well. Add ghee & milk mava powder and cook for one minutes.
  4. Place the cashew nut mixture in a bowl. Let it little bit cool down.
  5. In a pan, add sugar, saffron thread, rose essence, cardamom powder and 1/4 cup water. Boil it until one thread consistency. Add pista powder, mix it. Add ghee, 2 drops of green food color and cook for one minutes.
  6. Place the pista mixture in a bowl. Let it little bit cool down.
  7. Make equal small size cashew nut & pista balls. Roll them separately to make 3 inch size circular shape. Place pista roll over cashew nut roll and then fold in circular fashion to give a cylindrical shape.
  8. If you want you can wrap it with silver foil.
  9. Kaju pista roll is ready to be served.

    1. Thanks Rashmi. You can check the sugar syrup consistency by following this process. Boil the sugar into water at high flame, when it starts boiling, bring the flame to medium. At regular interval take a couple of drops of sugar syrup in a small plate, dip your index finger and rub the syrup using your thumb. then separate your index finger with thumb and you would see a small thread between them. If there is only one thread formed, then it’s one thread consistency. As you keep boiling more you would see number of threads would increase. Yep, needs some practice to find out.

    1. Milk mawa powder is nothing but khoya in powder form. Its generally available in Indian grocery store. Deep brand milk mawa powder is available online as well.
