  1. Generally Lychee is available during summer and is a very juicy fruit. It would be mostly available in Asian markets.
  2. Ingredients for Lychee Ice cream. Peel the lychees and remove the seeds. Keep it aside. You can use the canned one, if fresh is not available.
  3. Grind the lychee pulp and make a fine paste. Refrigerate it for half an hour.
  4. In a sauce pan, add milk and let it boil at medium heat. Once it start boiling, add milk powder and sugar, let it boil till sugar dissolves fully. Add heavy whipping cream in the boiling milk. In a separate bowl take out 3 table spoon boiling milk, add corn starch, mix it well and pour it back to boiling milk. Stir the milk continuously, and slowly, it will start become thick. Once it gets thick, turn off the heat. Let it cool then refrigerate for an hour.
  5. Take the milk mixture out of the refrigerator and add vanilla extract, lemon zest and lychee paste then mix it very well. Pour the mixture in an airtight container and keep it in a freezer for 2 hrs. (If you have ice cream machine, just pour the mixture in a ice cream maker with following the machine instructions to prepare the ice cream.) If you don’t have ice cream maker follow the next steps.
  6. This step is required if you don’t have ice cream maker, take out the mixture from freezer, mix it using fork and place it back in to the freezer again. After this repeat this process every hour for 3 to 4 hours.
  7. Once it done, scoop it using a scoop spoon.
  8. Delicious lychee ice cream is ready to be serve. Enjoy it chill as a dessert in summer.
