  1. Ingredients for Mohanthal. Heat about 3 tbsp ghee & mix 4 tbsp milk after the ghee melts and keep it aside.
  2. In a mixing bowl, add gram flour and make a cavity in the center and pour ghee and milk mix then cover it with flour. Keep it aside for 20 mins.
  3. After 20 mins, rub the gram flour and ghee mixture using both palms nicely so that it spreads evenly.
  4. Sieve the mixture using a strainer so it will have a grainy texture.
  5. Keep the mixture aside.
  6. Take rest of the ghee and heat in a non-stick pan or kadahi. Add the gram flour mix as prepared in step 5 and roast it at low to medium heat for about 20 to 25 minutes until aromatic. While roasting stir the mixture regularly. Once it done, it will become lighter in weight, slightly brown color, and also start to separate out the ghee from the flour.
  7. Add mawa into the mixture. Keep heat at low. Mix it very well until flour and mawa get mixed. Turn off the heat.
  8. In parallel on another stove, prepare the sugar syrup. To do that add 1 cup of water, sugar, saffron threads and cardamon powder in a sauce pan. Let it boil until it has a 2 thread consistency. Once it’s done, keep it aside.
  9. Add the gram flour mix to the sugar syrup and mix well.
  10. Grease a thali or cake pan with ghee. Pour the mixture into the container. Sprinkle some almond and pistachios on it. Refrigerate for 2 hrs.
  11. Once it’s set cut in small pieces.
  12. Enjoy delicious Mohanthal or besan burfi as a dessert.
Recipe Notes

(1)..When roasting the besan flour, keep heat at low to medium and keep stirring the mixture.

(2)..Use heavy bottom non-stick pan.

(3).. When roasting is done, don’t leave the besan in the pan on stove rather shift it to a different pan.
