Pav Bhaji

Pav Bhaji is a famous street food in Mumbai, India however its available most part of India. Pav bhaji is all time my kids favorite and they love to take it for their lunch boxes. Bhaji is made with vegetables and some specific spices. You can add or adjust the vegetable ingredients as per your taste. This is one of the awesome snacks/fast food recipe and very easy to make. This dish is perfect for your parties or gathering.  You can also make sandwiches from pav and bhaji for kids.

Ingredients

  1. In a steamer, steam french beans, carrot, cauliflower till it gets tender. Boil potatoes and mash it, keep it aside.
  2. Coarse grind the steamed vegetable in a food processor. Keep it aside.
  3. Ingredients for bhaji.
  4. Heat 4 tbsp oil and 1 tbsp butter in a pan, add 1/2 tsp cumin seeds. Wait till crackles, add onion, little salt and ginger- garlic paste. Saute in a medium heat till slightly golden brown.
  5. Add chopped tomatoes, saute till tomatoes gets mushy. Add chopped bell peppers, turmeric powder and saute for 2-3 min in medium heat with closed lid.
  6. Add pav bhaji masala, garam masala, coriander and cumin powder, red chili and kasoori methi, chaat masala, saute for 3-4 min. (red chili is optional, if u don't want spicy then skip it).
  7. Add grind vegetables, mashed potatoes and vegetable stock, cook for another 6-7 min in low to medium heat with closed lid. Stir at regular interval for even cooking.
  8. Add 1 tbsp butter and stir it well.
  9. Add tomato ketchup and honey, mix well and turn off the heat and cover it for 3 min. Pav bhaji is ready to be served.
  10. Garnish with coriander leaves and onion ring. Sprinkle some lemon juice on bhaji. Serve hot with wheat Pav or regular Pav.
