Strawberry & Beetroot Kesari

Happy Valentine Day!! This special valentine day dessert recipe for your love ones. The strawberry & beetroot kesari is slight variation of normal kesari. The regular kesari is made during for worships and on special occasions as Prasad. The recipe is prepared with ghee roasted rava cooked into milk, beetroot & strawberry puree and flavored with cardamon powder and kewra-rose essence. Instructions
  1. Peel the beetroot and clean it with water.
  2. Cut strawberry and beetroot into small pieces. Grind it with 1/2 cup water to make puree.
  3. Boil the beetroot & strawberry puree with 3 tbsp sugar at medium heat till puree gets to medium thickness. This is to avoid the milk getting curdled once it is mixed to the milk. Once it done, turn off the heat. Keep it aside.
  4. Meanwhile, heat ghee in kadhai or deep pan, add rava and roast it at medium heat till slightly golden color. Stir it continuously to avoid burning.
  5. Add milk and sugar into roasted rava and stir it. Once it come to boil simmer it at low to medium heat and stir it continuously to avoid it getting stick to the pan bottom. Add strawberry & beetroot puree, green cardamon powder, kewra & rose essence in to it. Preserve some strawberry & beetroot puree for garnishing and decoration.
  6. Cook it at low heat till all rava grain gets transparent and cooked well. The mixture should get to dough consistency. Once its done, turn off the heat.
  7. Spread kesari mix evenly in greased cake pan. Sprinkle some dry coconut powder, little keser (saffron) and pistachios powder on it. Place it into refrigerator to set about 1 hours.
  8. Once its set, cut in heart shape using a cookie cutter or shape of your choice.
  9. Heart shape strawberry & beetroot kesari is ready to be served.
  10. You can serve it as is or decorate as per your choice.
  11. Server to your valentine on this special day.
