  1. Clean the okras ( bhindi) with running water and wipe it with a clean kitchen towel. Make sure it’s completely dry before you start. Slit the okra in the middle, leaving space between the top and bottom ends of the okra. Keep it aside.
  2. Ingredients for the filling.
  3. Heat 1 tbsp oil in a non-stick pan or kadhai. Add panch phoran,( to make panch phoran take 1/4 tsp cumin seeds, 1/4 tsp fennel seeds, 1/4 tsp mustard seeds, 1/4 tsp kalonji (Nigella Seeds), 1/8 tsp fenugreek seeds and mix all spices very well). Once it start crackling, add ground onion, ginger-garlic paste, black salt and little salt into it. Saute for 5-6 minutes until onion gets slightly golden color at medium heat.
  4. Add turmeric powder, tomato puree and saute for 3 minutes.
  5. Add amchoor powder, coriander and cumin powder, chili powder, and achari masala into it.
  6. Saute all masala for 2 minutes. Turn off the heat. Let the masala cool.
  7. Stuff small amount of prepared masala in okra. Finish all stuffing. Keep it aside.
  8. Heat oil in non-stick pan. Add stuffed okra into hot oil. Let it cook at low heat with lid for about 10 minutes. At regular intervals stir the okra to other side so it gets fried from all the sides.
  9. Once it gets tender, stir fry without lid till golden color at medium heat for about 3-4 minutes. Turn off the heat once ready.
  10. Stuffed okra( bhindi) is ready to be served.
  11. Enjoy stuffed okra with rice-daal and roti with gravy curry.
