Chicken Appam Potli

Appam is a popular dish in south India, specifically in Kerala. This recipe is made with rice, fermented using yeast. It’s an easy recipe to prepare and generally served with either vegetable stew, chicken curry or egg curry. To prepare this dish you would need a special Appam pan generally available in Indian stores. I have add a little twist by stuffing the Appam with a chicken filling and giving it a potli shape. For the side, I prepared the slightly sweetened vegetable tomato stew. The taste turned out to be pretty awesome and the potli shape made it look more appetizing. You can also make veg colored Appam using spinach, carrot and beetroot puree.

Focaccia Bread

Focaccia Bread is a Italian bread which is flat and oven baked. The bread is generally topped with various herbs. Rosemary gives a wonderful aroma to bread. The bread is served with olive oil and can also be topped with olives, mushrooms, green onion and tomatoes. It tastes very good and certainly different than any normal bread. It is used as side during the lunch or dinner.

Veg Couscous Pulao

Couscous is a traditional middle eastern grain made from semolina. Couscous doesn’t have its own flavor however it goes very well as a base for vegetables, chicken and, meat dishes. The grain is also used in salad recipes along with herbs like coriander, basil, parsley and mint. One can eat this as a side with chicken or vegetable stew. I have given a little twist to the recipe by adding some spices to make it a little tangy and tasteful. This recipe is a vegetarian recipe and you can use your favorite vegetables as well. The dish is very nutritious and can be prepared in short time.

Stuffed Karela Fry (Bitter gourd)

Karela’s( bitter gourd) bitter taste might turn people away from it however it can really sweeten your health by virtue of its disease preventing and health promoting phyto chemical compounds. There are a variety of recipes you can make with Karela, like stir fried Karela with onion, or gravy or stuffed karela fry. Stuffed karela goes very well with simple daal and rice as a side dish.

Chicken Tikka Masala

Chicken tikka masala is one of the most popular non-veg dish. You can find this yummy dish in every Indian restaurant. Grilled chicken cooked in thick creamy gravy and a combination of spices makes it very delicious. Chicken tikka masala goes very well with jeera rice, parata or garlic naan.

 

Green Egg Curry

Egg curry is a simple and easy recipe however  there are many variations. Green egg curry is slightly different then normal.  Green egg curry prepared using baby spinach, corn and Indian spices. Boiled roasted eggs in to spinach and tomato green curry gives a nice color compliment to the dish and taste delicious. Egg curry goes very well with rice or paratha or naan. This curry recipe can be used for paneer or tofu.

Poi Leaves (Malabar Spinach) Pakora

Poi leaves are also called as Malabar Spinach or Basella Spinach and generally available in Indian grocery stores or Asian market. Poi leaves are glossy, broad, deep green and thick. The pakora/bhajji made from Poi leaves tastes awesome and goes very well as snack item with tea.  It can be prepared in both way either shallow fry or deep fry. In fact you can bake as well if you are worried about oil. However the best taste is in deep fried as always.

Tilapia Fish Manchurian Dry

Manchurian’s are a very popular Indo Chinese starter and a personal favorite for most people. Tilapia fish Manchurian is a manchurian recipe similar to gobhi Manchurian or chicken Manchurian. In this recipe, the fish is crispy from the outside and soft and juicy inside.
