Chana Poori Masala Paani

Pani poori is a most popular mouthwatering street food.This recipe is a slight variation from the normal pani poori. The poori is made using chana for this recipe (see the Chana poori recipe) and have tried two varieties of pani one regular and other one with beetroot. The taste of this pani poori is different than regular however it’s awesome. If you like a little different taste in your pani poori, just try this out.

Ingredients

For Poori masala and Pani
  1. To make beetroot masala pani, grate the gooseberry and squeeze juice from it and keep it aside. In a big mixing bowl, add water, beetroot puree, gooseberry juice and all spices in to it. Mix all of it nicely. You can add spices as per your taste. Strain the pani using a strainer and keep it aside.
  2. To make mint & coriander masala pani, add all ingredients in grinder and grind it and make a puree. Pour the mix in to a big mixing bowl and add water. Coriander and mint masala pani is ready. You can add spices as per your taste. Stain the pani using strainer and keep it aside.
  3. Soak the black chickpeas and garbanzo beans in to water overnight. Boil black chickpeas and garbanzo beans together in a pressure cooker for about 3-4 whistle. In a mixing bowl, add boiled chickpeas, tomato, onion, coriander leaves, sprinkle some chaat masala and salt. Mix all and keep it aside. For potato masala, boil and mash the potato, add salt, crushed coriander seeds, chili flakes, coriander leaves and green chutney. Mix all well and Keep it aside.
  4. For serving, in a plate, fill the poori with masala, add little green chutney and sweet chutney on it. Garnish with fruit vegetable pearls. Serve with masala pani.
