Chiku (Sapota) Ice Cream

Chiku a.k.a. Sapota is a brown color fruit that is exceptionally sweet. Chiku can be eaten as a fruit or drank as Chiku milk shake, which is a very famous drink. Ice cream is everyone’s favorite dessert and one can buy a variety of them in stores. However you might not find Chiku ice cream in a store. This recipe provides steps to prepare Chiku Ice cream at your own house. Homemade ice cream is always the best, you can also tweak it based on your taste. It is super easy to make this ice cream and it tastes delicious. This ice cream is flavored with coffee and vanilla extract, coffee gives a unique taste to chiku ice cream and is well served with chia seeds. Enjoy this summer special recipe during hot days!

  1. Clean Chikus with water and peel the skin using knife. Remove all seeds from Chikus.
  2. Grind it in a grinder to make smooth puree.
  3. In a sauce pan, heat milk, sugar, corn starch and coffee at medium heat till it comes to boil. Take off the pan from heat and give a ice bath to cool down. When it cools down completely, add heavy whipping cream, vanilla extract, chiku puree and salt in to milk solution. Mix it very well using wire whisker. Once it done, transfer it in to container and cover it. Keep it into fridge for 5-6 hrs.
  4. If you are using ice cream maker, Keep the ice cream maker bowl in freezer for 7-8 hrs for chilling. Turn on the ice cream maker. Pour the mixture into the frozen ice cream maker bowl.
  5. Turn on the ice cream make and let it run for about 15 to 20 minutes, the mixture would slowly get thickened.
  6. The ice cream will have a soft and creamy texture.
  7. If you need a more firm consistency, transfer the ice cream to an airtight container and place in freezer for about 2 hours.
  8. Remove from freezer about 15 minutes before serving.
  9. Delicious chiku ice cream is ready.
  10. Soak the chia seeds into 1 cup water for overnight. Serve it chill with chia seeds as a dessert.
  11. Enjoy the ice cream this summer.
