  1. Ingredients for parwal dry.
  2. Scrape upper layer of parwal using knife and cut sides of parwal. Clean it with water and keep it aside.
  3. Chop onion, garlic and ginger. Coarse grind all three of them in a grinder without adding water and keep it aside.
  4. Cut the Parwal from center in two parts as shown in picture and then slit half of each part as shown.
  5. Heat 1 tbsp of oil in a non-stick kadhai or pan an heat at medium flame. Add parwal and little salt in to it. Roast it for 5 minutes or until parwal gets slightly golden color. Turn off the heat and move it on to a plate.
  6. In a same kadhai, heat 3 tbsp oil, add cumin seeds and fenugeek seeds in to it. Once cumin and fenugreek seeds crackle, add ground onion and little salt in to it. Saute for 5-6 minutes at medium heat until onion gets slightly golden color. Add coriander and cumin powder, black pepper powder, turmeric powder and amchoor powder in to fried onion and saute it for 1 minute.
  7. Add 1/4 cup of water into the pan and mix it well. Add fried parwal in to the pan and mix it again. Cover it and cook until parwal gets soft for about 10 minutes. Keep stirring so that it is not burnt.
  8. Once it is cooked, it would get dry texture as shown in picture.
  9. Parwal dry is ready to be served. The parwal dry can to stored up to 2-3 days in the refrigerator.
  10. Enjoy this yummy dry vegetable with daal, rice and roti.
  11. Pack it for kids or anybody’s lunch box along with paratha.
