Soya Methi Thepla

Thepla is a famous Gujarati flat bread dish prepared using wheat and gram flour. Since it’s a dry dish and remains good for long period, you could prepare it and carry it on your vacation travel. It also goes well for lunch boxes or a snack with a cup of tea. This recipe is prepared using methi(fenugreek), soya(dill) leaves along with basic ingredients and spices. These green vegetables gives nice aroma and great taste to Thepla. Thepla goes well with Jam and any Pickle and you don’t need a side dish with it. soya-methi_1

Raw Kathal ( Jackfruit) Dum

Kathal (Jackfruit) can be used as vegetable when it’s raw or as fruit when it gets riped. In Northern part of India people mostly use it as vegetable however in South mostly people use it as fruit. Raw Jackfruit can be used to prepare variety of dishes like dry, curry or kofta. Raw Jackfruit dishes are my favorite and I have been always looking to find fresh Jackfruit, however in many of my attempts I failed to find the right one to make proper vegetable dish. Cutting raw Jackfruit requires some skills as it is very sticky, my Mom used oil to grease her palm and knife while cutting the kathal. For this recipe I have used the canned  raw Jackfruit which is available in Indian grocery stores which makes it easier as it is already cleaned and cut. I am sharing this recipe from my Mom who used to make it amazingly delicious. Boiled and roasted kathal cooked in onion and tomato gravy flavored with garam masala powder, nutmeg powder and spices. This simple curry is a great compliment with steamed rice or roti.

 

Baked Bhakarwadi

Bhakarwadi is a tea time snacks item which is traditionally a spicy Maharashtrian snacks prepared using hot spices and deep fried in oil. In this recipe instead of deep frying, I have baked it in oven however both of them tastes similar. The fillings for the Bhakarwadi can be customized to your taste. Generally it has sweet and sour taste and nice aroma of spices. The outer crust is made either from all purpose flour or a mixture of  besan and regular wheat flour. If you don’t like the baked one, you can just deep fry instead of baking. Bhakarwadi can be store in a air-tight container for weeks and goes well with cup of tea.

Mix Veg Korma – Without Onion Garlic

Vegetable korma is a delicious flavorful creamy dish prepared using mix of vegetables, flavored with gram masala and methi leaves.This recipe is easy to prepare and popular all over India. The taste and the flavor varies with the different cooking technique. This recipe can be prepared with or without onion and garlic. People generally prepare the food without onion and garlic in festival season like Navrathri. The gravy prepared using tomato and cashew nuts gives a real rich taste & texture to the Korma.Vegetable korma is a great compliment with jeera rice, naan or parathas.

Green Egg Curry

Egg curry is a simple and easy recipe however  there are many variations. Green egg curry is slightly different then normal.  Green egg curry prepared using baby spinach, corn and Indian spices. Boiled roasted eggs in to spinach and tomato green curry gives a nice color compliment to the dish and taste delicious. Egg curry goes very well with rice or paratha or naan. This curry recipe can be used for paneer or tofu.

Parwal Dry

Parwal is popular vegetable in Northern India. This recipe is dedicated to my Mom. She used to prepare it for our lunch boxes along with paratha. This is supper easy to cook and goes very well with daal -rice and roti or parathas. There are varieties of recipes made using Parval like aloo-parwal gravy, stuffted parwal dry, aloo-parwal fry and dum aloo-parwa.

Zucchini Soya Dry

Zucchini Soya dry vegetable curry is a very delicious and simple recipe. This squash has a mild taste and can be use in a variety of recipes. In this recipe i have use channa daal and soya granules along with some spices. It is very healthy and easy to make for your daily meals. Zicchini soya dry goes very well with roti, Paratha or rice.

Sweet & Sour Mango Apple Chutney

Chutneys are very essential dishes in Indian cuisine. There are a variety of chutney recipes which can be found in India. Some are sweet and some are spicy. Indian food is incomplete without chutney. This recipe is made with two fruits which have tangy and sweet taste.  Apple and mango cooked with jaggrey and flavored with spices.It’s a great compliment with Paratha or with bread for breakfast. My kids love to take it to school with Paratha. It is very easy to prepare and you can store it for up to a couple of weeks in the fridge.
