Dal Dhokli

Dal Dhokli is a delicious traditional Gujarati comfort food, made with many variations and known by different names in other states of India. In North India it is called Dal Pitthi. The Dhokli is made with wheat dough, then rolled into thin circles and cut into square or diamond shapes. The Dhokli is then mixed into the sweet-sour Gujarati dal and tadka with ghee and spices; and left to simmer until it gets cook properly. This recipe utilizes Jowar flour along with wheat flour to make it healthier. This one bowl meal can be prepared over the weekend, which gives a big change to our daily meal. You can use your leftover dal, and convert it into a healthy Dal Dhokli!

Ingredients

  1. Clean the dal three times with water. Cook dal, turmeric powder, and salt along with 4 cups of water in a pressure cooker at medium heat for 3-4 whistles.
  2. Once it's done, turn off the heat and let it cool down naturally.
  3. Meanwhile, take wheat flour, jowar flour, gram flour, turmeric powder, salt, carom seeds, and red chili powder, in a mixing bowl.
  4. Add water and make a semi tight dough. Cover it and keep it aside for 10 minutes.
  5. Divide the dough into 3 equal pieces. Place one dough ball on a rolling board. Dust it with a little wheat flour and roll it into a thin circle and cut into diamond or square shape. Repeat the process to make rest of the dhokli.
  6. Drop the dhokli into the cooked dal and let it simmer for 10 minutes or until it gets cook properly. Adjust the liquid consistency as per your taste.
  7. Ingredients for tadka.
  8. Heat ghee in a pan at medium heat. Add cumin seeds and mustard seeds. Once it starts crackling add whole red chilies, and saute it for few seconds. Add cinnamon sticks, cloves, garlic-ginger, hing and curry leaves. Saute it for few seconds till the garlic turns slightly golden in color.
  9. Add tomato, turmeric powder, and little salt.
  10. Cook the tomato till gets soft. Add coriander-cumin powder and jaggrey. Cook it for 1-2 minutes.
  11. Add it into the dal dhokli and mix. Cook it for another 1 minute. Turn off the heat once it's done.
  12. Add coriander leaves and lemon juice. Stir it well. Let it be covered for 15 -20 minutes before serving.
  13. Transfer it into a serving bowl.
