Quinoa Kale & Spinach Patties

Quinoa is very healthy and a good source of protein. It tastes similar to brown rice or oatmeal. Quinoa combined with fresh kale, spinach, oats, onion, carrot, potato and Parmesan cheese is sure to rock your taste buds! This recipe is so flexible you could make all kinds of substitutions to suit your preferences and still get the same basic result. I made two types of patties, plain patties and bread covered patties. These patties can be served as a tea time appetizer or sandwiches with avocado dip. Tastes awesome.

Ingredients

Instructions
For Quinao Patties
  1. Soak quinoa in to lukewarm water for about 5 minutes. Soak oats in to 1/4 cup of water. Boil one and half cup of water in a deep pan, once it comes to a boil, add soaked quinoa and little salt into it, cover it and let it cook for 15 minutes at lower than medium heat. Once it is cooked properly, turn off the heat and keep it aside with lid on. Chop the kale and spinach very fine and keep it aside. Grate the carrots and keep it aside. Boil the potatoes and mash it, keep it aside.
  2. Heat oil in a frying pan, add garlic into it and saute till slightly golden color. Add chopped onion and saute till slightly golden color. Add chopped kale and spinach and little salt into it and saute till kale and spinach leaves gets tender for around 5 minutes.
  3. Add grated carrots, cook for 3 more minutes. Add soaked oats and cook for 3 minutes at medium heat.
  4. Add boiled mashed potato, cooked quinoa, bread crumbs and Parmesan cheese and mix it well. Turn off the heat. Let the mixture cool down.
  5. Make a small patties and keep it aside.
  6. Heat a non-stick pan, add a little oil at medium heat. Place the patties into pan and shallow fry both side till golden color.
  7. Once it done, keep it aside.
  8. Kale spinach quinoa patties are ready to be served. You can serve like this or you can make sandwich out of this.
For Bread Covered Patties
  1. For making bread covering, take wheat bread or white bread. Cut with cookie (big or small whatever size you want ) cutter. Sprinkle some milk to make it little soft. Take a piece of bread on your palm, stuff the Quinoa mixture and close the edges of the bread similar to stuffed paratha recipe and press it a bit to give a patties shape.
  2. Sallow fry the patties both side till golden color at medium heat.
  3. Once it done, Remove the patties from the pan and place on tissue paper.
  4. Quinoa kale and spinach patties are ready. Serve as a snacks with tea or after school for kids.
For Lunch Box
  1. For kids lunch box, Take some wheat pav. Cut in center and apply some butter. Grill the pav on tava or pan until slightly golden color.
  2. Take some lettuce leaves, onion rings, thin sliced tomatoes, tomato ketchup and cheese. You can use any kind of dressing. Apply some tomato ketchup on pav, place a lettuce leave and onion rings. Place one of the patties then a layer of lettuce leave and spread some tomato ketchup on it. Place second part of the pav on top. Fork it with toothpicks to keep it together.
  3. Mini pav with quinoa kale spinach patties are ready for kids lunch boxes.
  4. Give it to your kids for school lunch.
