Roasted Methi (Fenugreek) Leaves

Methi (Fenugreek) leaves have good health benefits. The fresh leaves are used for variety of recipes like dry side dish, paratha, paneer dishes, sambhar and non-veg dishes as well.  The fenugreek leaves are aromatic has cooling effect. The methi leaves provide a unique flavor to the recipe. Fresh methi leaves are slightly bitter and can be stored only for a short duration. This recipe helps in reducing the bitterness and also can be stored longer than fresh leave and retaining the same flavor.

  1. Remove the leaves from the stem. Clean it with 2-3 times with running water very nicely. Drain all water from the methi( fenugreek) leaves and let it dry until all moisture goes away.
  2. Grind it in food processor to make fine texture without adding any water.
  3. Heat ghee in pan at medium heat. Add grind methi leaves in to hot ghee. Bring the temperature on less then medium heat. Roast the methi leaves till dry and aromatic. Make sure it doesn't burn.
  4. Once it done, Turn off the heat. Transfer the methi leaves into bowl. Roasted methi is ready for any recipes. You can keep it container in to fridge for 2-3 week.
