Sambar

Sambar is one of the main south Indian dish and goes well with Idli, Vada, Rice, and Dosa. This recipe is made of mixed vegetables, daal and spiced with samber masala. It’s very tasty and healthy. There are different kinds of Sambar made in different part of south India. This simple dish is easy to prepare.

  1. Ingredients for sambar. Boil tur dal in a pressure cooker in 3 cups of water, salt and turmeric powder at medium heat for 3 whistle. When its done, turn of the heat and let it cool down naturally.
  2. Heat oil and ghee in a pan at medium heat. Add mustard seeds, wait till it crackles. Add red chili, hing( Asafoetida ) and curry leaves, stir it for few sec or until slightly brown.
  3. Add onion and little salt and saute it for 3 min at medium heat.
  4. Add all cut vegetables and 1/4 tsp turmeric powder, saute it for 3-4 min.
  5. Add coconut and jaggery and sambar powder, saute it for 2 min.
  6. Add boiled dal, Tamarind paste and 3 cups of water.
  7. You could cook it in an pan with covered lid at medium heat for 10 minutes until vegetables are cooked or in pressure cooker until one whistle.
  8. Serve hot with idli, vada, dosa or rice.
