Batata Vada ( Aloo Bonda)

Batata Vada (Aloo Bonda) is a very famous fast food in Mumbai, Maharashtra. Batata means nothing but potato. This recipe is very easy to prepare. Boiled and mashed potato is first saute’d with coriander, mint leaves, chili and ginger paste then deep fried after coating it with gram flour batter. It can be served as a snack directly, and can also be used to make popular vada pav when served with pav, mint-coriander, dry garlic and tamarind chutney. There is a slightly different version of batata vada in Gujarat where the mashed potato is mixed with green chilies, coriander leaves, and garlic paste and deep fried with gram flour batter. Enjoy batata vada with a hot cup of tea. 

Quinoa Kale & Spinach Patties

Quinoa is very healthy and a good source of protein. It tastes similar to brown rice or oatmeal. Quinoa combined with fresh kale, spinach, oats, onion, carrot, potato and Parmesan cheese is sure to rock your taste buds! This recipe is so flexible you could make all kinds of substitutions to suit your preferences and still get the same basic result. I made two types of patties, plain patties and bread covered patties. These patties can be served as a tea time appetizer or sandwiches with avocado dip. Tastes awesome.

Hariyali Paneer Kofta Curry

Kofta dishes are famous in north India. There are varieties of kofta curries, like lauki (bottlegourd) kofta, paneer kofta, banana kofta, malai kofta & chicken kofta. Hariyali paneer kofta curry is prepared using deep fried stuffed panner in spinach balls and dipped in rich, sweet & creamy gravy. This kofta curry tastes delicious and goes very well with naan, paratha or jeera rice.
