  1. Arrange all the ingredients before start. Slightly dry roast rava and keep it aside. Roasting rava give a nice crispiness to the vada.
  2. In a big mixing bowl, add all purpose flour, rava, rice flour, hing, salt, cumin seeds and vegetable shortening. Mix it well till it gets crumble texture. At this stage you can save the mix for later use.
  3. Add onion, coriander leaves, ginger, chili, curry leaves and mix it well. Add little water and make a medium soft dough. Do not add excess water as onion would release some water and make it more soft.
  4. Heat oil in a deep frying pan at medium to high heat. Once its hot, bring the temperature at medium heat. Divide dough in equal lemon size balls. Apply some water on Palm. Take one ball on Pam and flatten it using fingers to make a round flat vada.
  5. If you wish, you can give different shapes to the vada. It would look more appealing to kids. To make heart shape vada, take big size dough ball. Flat it on any plastic or silicon mat. Do not make very thin. Cut it with cookie cutter as shown in picture.
  6. This picture displays the use of star shaped cookie cutter. Prepare all the raw Vada.
  7. Slowly Slide the raw Vada into hot oil from side and fry till gets golden color from both side. Maintain the temperature at low to medium heat so that Vada gets crispy.
  8. When done, remove it from hot oil and place it on paper towel to absorb excess oil from vada. Fry rest of vada following same process.
  9. Crispy delicious Maddur Vada’s are ready.
  10. Serve it hot with coconut chutney and enjoy with a cup of masala tea or coffee.
  11. Maddur vada is perfect tea time snack as well as after school snacks for kids too.
