Mutter Corn Potli

Mutter Corn Potli is a recipe which goes very well as tea time snacks or as appetizer at parties. There are variety of snacks dishes in India and many of them are the ones which are prepared fresh and served hot. Mutter Corn Potli is very similar to popular snack Samosa however with little cute shape and a slightly different filling. Potli in Hindi is referred to a small jewelry bag. The crust for this recipe is prepared using all purpose flour and filled with sauteed peas & corn with tangy spices mix. The Mutter Corn Potli tastes awesome with date & tamarind chutney. Papdi Chaat Basket

Chaat, just hearing the word makes your mouth water. This tangy street food is very famous all over India and loved by everyone. There are many types of chaats like samosa chaat, dahi poori chaat, chana kachori chaat, aloo tikki chaat and so on. I have already shared papdi & papdi chaat recipes earlier. This is a variation to the actual papdi chaat as I have added mini papdi baskets instead of plain papdi. Mini papdi basket is made using all purpose flour, rava and some carom seeds. I have used vegetable shortening however you can use butter or ghee instead. In order to make crispy crunchy papdi baskets, the dough should be tight and after adding shorting it should be mixed very well. To give it a basket shape, I have used mini tin tart molds. The basket can also be baked instead of deep fried. This recipe is a perfect finger food for your gatherings or parties. The papdi basket can be prepared ahead of time and stored in air tight containers to keep it crispy.

Green Chana Poori

Poori is a deep fried Indian bread which is famous all over India. There are many kind of pooris like a palak & beetroot poori, plain poori, bhatura, stuffed chana daal poori and so on. Delicious green chana poori is made using wheat flour, fresh green chana and palak(spinach) puree and deep fried in oil. Pooris are all time favorite of my kids and they love to eat as lunch in school so I make them very often. During the season when Green Chana is available I make pooris using it. You can find green chana in Indian store or use frozen green chana if not fresh one is not available. There are many recipes which can be prepared using fresh green chana like paratha, kabab, spiced daal, curry or so on. In this recipe I have added spinach to give a nice green color. You can skip spinach if you don’t like and make it only with chana. Green chana poori goes very well with any Indian curry, pickle or dry sabji.

Maddur Vada

Maddur Vada is a very popular spicy, crispy and mouthwatering snack. The name is based on a place called Maddur in Karnataka which is situated between Bangalore and Mysore. It was one of our favorite snacks while travelling by train between Bangalore and Mysore. Basically, Maddur vada has mainly three ingredients rice flour, fine rava and all purpose flour. The dough is flavored with onion, ginger, curry leaves, hing (asafoetida) and  green chili. The beauty of this vada is that it’s crust is very crispy however it is soft inside.  Generally, the Vada has round shape, however I tried some experiment with shape and it really looked very nice. I used cookie cutter to give it star and heart shape. You can always customize it’s size of the Vada and spiciness based on your choice. Maddur vada tastes great when served with coconut chutney along with a cup of tea or coffee. I am thankful to my friend Savitha Matad who taught this recipe to me. We had this Vada at her place after long time and it brought back the old memories and I thought of adding it to my recipe blog. Hope you all would enjoy this recipe!

Motichoor Ladoo

Motichoor ladoo is a delicious mouthwatering sweet which is famous in Northern part of India. Ladoo is commonly offered to GOD during worship as well as served on festival or occasions. These ladoos are all time favorite of my kids favorite. The ladoos are made from batter made of besan flour and deep fried in oil/ghee, then simmered in sugar syrup to thicken for final preparation. The laddos are flavored with rose essences and cardamon powder. The most important part of the recipe is the batter consistency and temperature of oil/ghee. Batter consistency should be medium thin so that it easily pass through Jhara. The process is little complex as you need to tap Jhara over the heated oil/ghee pot at a consistent speed to get the boondi shape. To make fine boondi you need Jhara with fine holes.

Motichoor laddo and boondi ladoo are little different with each other as boondis for motichoor is much finer than boondis of boondi ladoo. Preparing these ladoos is a bit time consuming and involved process and requires little practice and patience to get it perfect. I was able to get it right in my second attempt. I prepared these for Diwali and it came out perfect.

 

Punjabi Pakora Kadhi

Kadhi is one of the easiest recipe which is made using gram flour (besan), yogurt( curd) and spices tadka. Normally, we make kadhi with bari. The bari made with besan and deep fried. Punjabi kadhi is made replacing bari with fried onion pakoras.  There are variety of kadhi recipe in different part of India. Punjabi pakora kadhi is one of them. For a nice aroma and taste added roasted methi leaves in this recipe. Roasted methi recipe can be found here. This mouthwatering kadhi goes well with steamed rice and roti.

Chana Poori

Pani poori is one of the most popular street food in India. We love to eat this tangy and spicy snack. Poories are easily available in stores but making at home always better and fresh. Chana poori is a variation of normal poori of pani poori snacks. The dough is made using boiled ground chana,rava and wheat flour. This gives a really good taste to regular pani poori snacks. The process is exactly the same except for the dough.
