Batata Vada ( Aloo Bonda)

Batata Vada (Aloo Bonda) is a very famous fast food in Mumbai, Maharashtra. Batata means nothing but potato. This recipe is very easy to prepare. Boiled and mashed potato is first saute’d with coriander, mint leaves, chili and ginger paste then deep fried after coating it with gram flour batter. It can be served as a snack directly, and can also be used to make popular vada pav when served with pav, mint-coriander, dry garlic and tamarind chutney. There is a slightly different version of batata vada in Gujarat where the mashed potato is mixed with green chilies, coriander leaves, and garlic paste and deep fried with gram flour batter. Enjoy batata vada with a hot cup of tea. 

Strawberry Modak

Ukadiche Modak is a very famous Maharashtra sweet dumpling which is offered to Lord Ganesha during Ganesh Chaturthi festival celebration. Modak is made using rice flour shell which is filled with a sweet mixture of grated coconut, jaggery, poppy seeds and flavored with green cardamon and nutmeg powder. The Ukadiche modak is steam cooked. As such there are varieties of modak’s recipes like mava modak, puran modak, kesari modak and dry fruit modak. I have also published couple of modak recipes Ukadiche Modak and Indian blackberry Modak. This recipe is a another variation of modak recipe which has a filling based on strawberry. Straberry gives a unique fruit flavor as well as sweet and sour taste to the modak. Rest of the filling ingredients are same like coconut, mava and jaggery. Preparing modak first time or first few time could be a daunting task as it requires patience and some practice to get the right texture and shape. Quinoa Mix Daal Adai Dosa

Mix Daal Dosa is one of the many different types of Dosa found in South India. Mix daal dosa is prepared using a variety of daal (pulses), beans, quinoa and brown rice. Mix daal dosa is full of protein and a very healthy breakfast. Adding quinoa to the recipe makes it even more healthy and delicious. This dosa does not require overnight fermentation process, however, if you wish you can leave it for 3-4 hours to ferment. If you like your Dosa crispy, you can add a little rice flour into batter. Normally, this dosa is served with potato masala, sambar and coconut chutney. You can also try it with guacamole and it tastes just as good.

Maddur Vada

Maddur Vada is a very popular spicy, crispy and mouthwatering snack. The name is based on a place called Maddur in Karnataka which is situated between Bangalore and Mysore. It was one of our favorite snacks while travelling by train between Bangalore and Mysore. Basically, Maddur vada has mainly three ingredients rice flour, fine rava and all purpose flour. The dough is flavored with onion, ginger, curry leaves, hing (asafoetida) and  green chili. The beauty of this vada is that it’s crust is very crispy however it is soft inside.  Generally, the Vada has round shape, however I tried some experiment with shape and it really looked very nice. I used cookie cutter to give it star and heart shape. You can always customize it’s size of the Vada and spiciness based on your choice. Maddur vada tastes great when served with coconut chutney along with a cup of tea or coffee. I am thankful to my friend Savitha Matad who taught this recipe to me. We had this Vada at her place after long time and it brought back the old memories and I thought of adding it to my recipe blog. Hope you all would enjoy this recipe!

Mix Veg Pakora

Pakoras are mouthwatering snacks and everyone loves it. Pakora recipe is very simple recipe. Mix of veggies coated with besan (gram flour) & spices batter and deep fried. Specially on a rainy day it goes very well with a cup of masala tea. There are varieties of pakora recipe like Poi Leaves Pakora, Spinach Pakora, bread pakora, onion pakora, paneer pakora, chili pakora and so on.  The process of making all of them are similar however with little tweak depending on main ingredient. This recipe uses mix of vegetables like Lauki (bottle gourd), Baingan (brinjal), Zucchini, Potato, Bhindi (okra) for pakora. You can add any of your favorite vegetables. Pakora can be prepared on any occasion or just as a tea time snack. Adding rice flour makes pakora more crispy. The spicy pakora when served with tamarind & mint-coriander chutney tastes awesome.

Indian Blackberry Ukadiche Modak

Ukadiche modak is a delicious traditional Maharashtrian delicacy which is made during Ganesh puja to worship Lord Ganesha. Modaks are made with steamed rice flour shells filled with filling made from freshly grated coconut, jaggery, nuts, flavored with cardamom powder and nutmeg. For this recipe adding Indian blackberry a.k.a. jamun puree to rice flour gave a beautiful color to the traditional modaks. The most important aspect of making modaks is getting the perfect shape which is done by making rice flour petals and requires some practice before you can get perfection. Punjabi Pakora Kadhi

Kadhi is one of the easiest recipe which is made using gram flour (besan), yogurt( curd) and spices tadka. Normally, we make kadhi with bari. The bari made with besan and deep fried. Punjabi kadhi is made replacing bari with fried onion pakoras.  There are variety of kadhi recipe in different part of India. Punjabi pakora kadhi is one of them. Grilled Tofu

Grilled Tofu as such is a nice appetizer recipe, however marinating it with raw mango gives a unique taste. The recipe is prepared with sweet & sour sauce made from raw mangoes and marinating Tofu in that sauce along with other vegetables. Raw mango sauce gives a tangy flavor to tofu. This recipe is quite easy to prepare and perfect for summer appetizer.
