  1. In a muslin cloth, take 5 cups of homemade yogurt. Tie with rubber band and hang it for 2-3 hours. Do not throw the drained yogurt water, reserve it for other recipe, like making yogurt drink. If you are using Greek yogurt, no need to strain it.
  2. In a large mixing bowl, whisk the hung yogurt and vanilla extract very nicely using wire whisker or hand mixer. Keep a side.
  3. Matcha green tea.Keep aside.
  4. Chop lemon grass and grate ginger. Keep aside.
  5. Add Matcha green tea, lemon grass, crushed cardamom, sugar and ginger in milk and boil it in a saucepan. Over medium to low heat, bring mixture to a boil. Stir it using wire whisker nicely.
  6. Once it comes to boil, simmer it and let it boil until reduced by about 1/3 cup. Turn off the heat and let it cool down on ice bath. Strain using strainer.
  7. Meanwhile chill the ice cream maker bowl in freezer over night or follow the instructions of ice cream maker. Once mixture gets chill, mix it until mixture gets smooth. Pour into freezer container and freeze it for 2-3 hrs. or over night.
  8. Turn on the ice cream maker, pour the mixture into the frozen freezer bowl and let mix until thickened, about 15 to 20 minutes. The yogurt mixture will have a soft, creamy texture.
  9. Once its done, transfer the frozen yogurt to an airtight container and place it in freezer for about 3-4 hrs.
  10. Remove from freezer about 5-10 minutes before serving.
  11. Delicious refreshing flavorful Matcha green frozen yogurt is ready to serve. Scoop it and serve it immediately.
  12. Serve it as a cool dessert and enjoy with fruits.
