Instructions
  1. In a mixing bowl, add all purpose flour, wheat flour, carom seeds, methi leaves, salt, rava, oil, baking soda, baking powder. Mix all ingredients nicely.
  2. Add curd (yogurt) and slowly add milk in it and make a nice soft dough by kneading it. Once it is done, grease some oil on it and cover it. Keep it aside for 3 hrs in warm place.
  3. Make equal size of round ball and dust it with dry wheat flour. Make all round balls following the same process. Keep the dough ball covered. You can make the bhatura according to any size you want.
  4. Heat oil in a frying pan or kadhai at medium to high heat. Grease some oil on the board; take one ball on rolling board, and roll it using rolling pin. Make a round or oval shape Bhatura.
  5. Once oil is nice and hot, drop the bhatura in hot oil. Bhatura should be fried in very hot oil. Using a frying spoon slowly pour hot oil from the pan on top of the Bhatura. Doing this helps in puffing it nicely.
  6. When it gets a golden color, flip it to other side and fry till slightly golden color.
  7. Take out the Bhatura and place it on paper towel to absorb the excess oil. Make all bhatura following the same process.
  8. Methi bhatura is ready to be served.
  9. Serve it with chole or any curry.
Recipe Notes

Before dropping  raw bhatura in to oil ensure that the oil is hot otherwise bhatura will not puff.
