Mushroom Kabab

Mushroom kabab is an awesome appetizer for parties and gatherings. There are a variety of mushroom kabab recipes, however this recipe brings a little Indian flare to it. The mushroom is stuffed with bell peppers, paneer flavored with pickle masala and marinated in yogurt and spices. When served with grilled zucchini and yogurt mint chutney it has an unique taste.

For Stuffing
  1. Clean mushroom with running water. Drain all water from mushroom quickly. Wipe with clean kitchen towel or paper towel.
  2. Remove the stem of the mushroom and make a cavity. Chop the stem very fine and keep it aside.
  3. Heat oil in a pan at medium heat. Add 1/8 tsp Panch phoron to the oil. (To make Panch phoran take 1 tsp mustard seeds, 1 tsp fennel seeds, 1/4 tsp methi seeds, 1 tsp cumin seeds, kalonji (nigella) seeds and mix them together). Once it starts crackling, add green & red bell peppers, chopped stamps and salt to it. Saute it for 3 minutes. Add pickle (aachari ) masala, paneer and saute it for 2 minutes. Once it's done, turn off the heat.
  4. Mushroom stuffing is ready. Let it cool.
  5. Fill the mushroom with the filling mixture and keep it aside.
For Mushroom Marination
  1. In a mixing bowl, add all ingredients which is listed in the marination section. Mix them very well.
  2. Now, take each filled mushroom on your palm and coat it with marination mixture, Make sure to coat it nicely all over the mushrooms and keep it aside. Marinate all mushrooms following the same process. Cover it and keep it in the fridge for 45 minutes.
  3. Pre-heat the oven at 450 degree F. Line the baking tray with aluminium foil and grease it with some oil. Place the marinated mushrooms on the tray. Place the tray into the preheated oven on the lower rack and let it bake for 10 minutes. Change the mode on broil and let it roast for another 8-9 minutes till it has a golden color. Keep an eye while roasting so that it you do not over roast it.
  4. When it's done, remove it from the oven and turn off the oven.
  5. While mushrooms are getting baked, cut zucchini about 1/4'' inch thick in a round shape . Sprinkle a little salt and pepper on it and mix. Heat the griddle or non-stick pan at medium heat. When it gets hot, sprinkle some oil on it. Grill zuccihni on the griddle from both side till it turns brown. Turn off the heat and place the grilled zucchini onto a plate.
  6. For serving, place the grilled zucchini first, and then grilled mushroom on top.
  7. Garnish with coriander or mint leaves and serve it with yogurt mint chutney or sauce.
  8. Mushroom kababs is ready to be served. Enjoy this yummy kabab with your favorite drink.
