Ingredients

Instructions
  1. Clean and chop all vegetables in lengthwise and keep it aside. Here are fajita ingredients. You could cut vegetables at night and keep in refrigerator.
  2. If you don’t want the colorful, make plain dough. For colorful dough, grind spinach and carrot separately and make a puree. Divide the wheat flour in a three parts, 1 cup for spinach, 1 cup for carrot and 1 cup for plain dough. Add puree in flour gradually and ( add water if needed) make a semi soft dough. Cover it and keep it in refrigerator.
  3. In the morning, In a mixing bowl, add all vegetables, paneer, lemon juice and all spices listed in Fajita ingredient list, mix it well. Cover it and keep it aside for 5 minutes.
  4. Heat oil in a frying pan at medium heat, add chopped garlic, saute till slightly golden color. Once it gets golden color, add spring onions, saute for 1 minute.
  5. Add all marinated vegetables in to it, cook at high heat until vegetables gets tender and dry. Once it done turn of the heat.
  6. Veg fajita is ready. Keep them aside.
  7. Make a small size round balls and roll it to a 6 inch round shape using roller pin. You may need to dust the dough balls regularly during the rolling process. Heat iron tava at medium high.
  8. When tava gets hot enough bring the temperature at medium heat. place the raw tortilla for cooking. Once you see small bubbles popping up on tortilla, turn it over. Grease some oil on both side. Cook both side till light golden color. Once it done, cover it so it will be soft. Make how much you want, if some dough left refrigerate in airtight container.
  9. Final ingredient for rolls.
  10. For making rolls, take one tortilla on wooden surface, apply some tomato ketchup, some lettuces leave. Place veg fajita on it and roll it.
  11. Make all rolls following by same process.
  12. Fajita rolls are ready for kids lunch boxes.
  13. You could also cut it in different sizes and serve.
