For Dosa Batter
  1. This measurement is for 18 Dosa, you can adjust the measurement based on how many you want to make in same proportion. Rinse Urad daal, Channa daal, Toor daal, Methi seeds and rice three times with running water. Soak daal and rice in water for 7-8 hrs.
  2. Grind the mix in a grinder by adding water as needed and make a smooth paste. Paste should not be very thick and not very thin.
  3. Transfer the batter in to big bowl. Mix it well, cover it and keep it in a warm place for 10 to 11 hr for fermentation.
  4. Dosa batter is ready. You can keep fermented batter in a fridge for a week. Whenever you want to use this, remove from the fridge and add little salt, warm water and mix it well.
For Veg Set Dosa
  1. Shred beetroot, carrots and zucchini. Keep it aside. You can use any vegetable which your kids like.
  2. Take Dosa batter in three separate bowl. One bowl batter yields about 3 set Dosas. Add carrot, beetroot, zucchini, and pinch of baking soda in a each bowl separately. Add salt to taste and mix it well.
  3. In a heated non-stick flat pan, pour 1 scoop of veg dosa batter on pan, you don’t need to spread it, unless you would like the dosa very thin. Pour 1/2 tsp oil around the set Dosa. Cook Dosa until bottom is golden brown for about one and half minute with lid on at slightly lower than medium heat setting.
  4. Once it is cooked, flip it and let it cook for one more minute on other side. Make all set Dosa, following the same process.
  5. Flavorful Veg Set Dosas are ready for lunch boxes.
  6. Give it to your kids for school lunch with coconut chutney.
