  1. Peel the cover and clean fresh sweet corn with water. Place corncob on a clean plate or chopping board. Hold corncob in your hand and start trimming from upper part and cut down the corncob till end of the edges and remove corn kernels. Once done, keep them aside.
  2. Grind 3/4 cup of corn kernel and oats along with 1/2 cup water to make puree consistency. Reserve 1/4 cup corn kernels, we will add whole corn kernels in soup.
  3. Heat oil in a deep pan at medium heat. Add ginger-garlic, saute it for few seconds till ginger-garlic gets golden in color. Add chopped veggies, corn and little salt, stir fry for 1-2 minutes. Stir continuously to avoid it getting burnt.
  4. Add ground corn-oats mix and vegetable stock or water into veggies.
  5. Stir and cook at medium heat for 7-8 minutes. Add salt and pepper as per your taste.
  6. Turn off the heat and keep it covered for 5 minutes.
  7. Sprinkle some spring onion.
  8. Serve it hot with garlic bread.
  9. Enjoy this delicious and healthy soup as a starter.
