  1. Cut the Zucchini in small pieces. Keep it aside.
  2. Squeeze water from soya, then remove Channa dal from the water and keep it aside.
  3. Chop onion, green chilies and keep it aside. You can either directly take the ginger and garlic paste or grate whole ginger and garlic instead of making paste. Keep it aside.
  4. Heat oil in a kadhai, add cumin seeds. Once cumin seeds start crackling add chilies. Saute it for few seconds. Add onion, ginger-garlic paste and little salt. Saute it for 5-6 minutes at medium heat or until onion gets golden brown.
  5. Add soaked Soya Granules, coriander and cumin powder, and turmeric powder into it.
  6. Saute it for 2 minutes at medium heat. Stir continuously so that it is fried well.
  7. Add zucchini, channa daal and 1/2 cup water. Stir it and cover it. Let it cook at medium heat till channa daal is cooked well and zucchini gets tender (approximately 15 minutes to 20 minutes).
  8. Add garam masala and let it cook for 2 more minutes. It should be not very thick and not very liquidy. Turn off the heat.
  9. Hot healthy zucchini soya ki sabji is ready to be served.
  10. This goes very well with plain paratha, roti or can be used as side with rice and dal.
