Tricolor Multigrain Idli

Idli is one of the most popular breakfast dish in Southern part of India. The recipe is generally made with rice and urad dal. This recipe is made using mutli-grain Idli flour. To celebrating the Independence Day, I have tried to make a Idlis in tri-color using fresh vegetables for colors. This recipe does not require soaking overnight like traditional Idli recipe as it uses instant multi-grain flour. Tricolor multi-grain idli, made with rava, amaranth, oats, quinoa and natural colors are from beetroot & carrot and spinach. Idli goes very well with tomato chutney, coconut chutney with or without coriander and sambhar.

Green Moong Daal Dhokla

Dhokla is a yummy savory  famous Gujarati snacks. Traditionaly, it is made with gram flour (besan) and you can play with the ingredients by adding oats, quinoa or semolina to give a little twist to the taste and flavor. This recipe is about making Dhokla using green moong daal with spinach and quinoa. Quinoa & spinach gives a unique taste to the Dhokla along with providing a natural green color to it. To make it spongy you would need fruit salt  (ENO) or baking soda. You would also need Dhokla stand and steamer to prepare this recipe.

Tomato Rice

Tomato rice is a popular dish in the Southern part of India. Tomato rice could be very simple or filled with lot of ingredients and flavors. This colorful dish is easy to prepare and perfect for lunch or lunch boxes. One can use either leftover rice from previous night or make a fresh rice. In this recipe I have added some additional ingredients to make it more flavorful. You can adjust the spices according to your taste. Tomato rice goes very well with plain yogurt or raita.

Tomato Chutney

Tomato chutney is among the various chutneys available as part of the Indian cuisine like a coconut chutney, peanut chutney, onion chutney, garlic chutney, ridge gourd chutney and so on. South Indian dishes are incomplete without chutney. The tangy and slightly spicy chutney goes very well with Idli, dosa, vada or any south Indian dishes and its really easy to prepare.

Kadhi Bari

Kadhi bari is specialty from Bihar. As such there are variety of Kadhi recipe which comes from other states of India. The bari gives a different taste to the kadhi. Simple and easy to make. Enjoy this tangy and spicy kadhi with hot plain rice and roti.

Veg Sandwich Dhokla

Dhokla is a very famous Gujarati dish. It’s prepared with gram flour or rice. There are two types of dhokla called khaman which is prepared with fermented batter and instant dhokla. Veg sandwich dhokla is instant dhokla in a different flavor. This recipe is a sandwich dhokla with gram flour, vegetable puree and mint chutney and provides a different flavor to the original Dhokla.

Paniyaram

Paniyaram is a south Indian recipe and mainly prepared using idli batter. In this recipe I have added carrot, spinach and some spices which gives nice color and taste to paniyaram. You would need a Paniyaram pan to prepare this recipe. It’s a breakfast item and brings a variety in your breakfast. This tiny lentil and rice colorful balls can pack for your kids lunch boxes.
