  1. Ingredients for the veg patties. Chop all vegetables very fine by using the food processor . You can add vegetables of your choice. Take warm water in a bowl add soy chunks, leave it for 10 minutes. Then squeeze water from the soy and keep it aside.
  2. Heat oil in a pan, add fennel seeds & wait till crackle. Add ginger & garlic paste, saute until slightly golden color. Add beans, peas, salt and turmeric powder, saute it for 10 minutes at medium heat.
  3. Add squeezed soy chunks, all vegetables and saute it for 10 -12 minutes till vegetable gets tender. Add coriander-cumin powder, chaat masala powder, garam masala, red chili, amchoor powder, and mint chutney and saute it for 5-6 minutes. Add mashed potato to the pan and mix it very well. Lastly add coriander leaves and bread crumbs, mix it well. Let it cool down.
  4. Make a small balls of veggie mixture, dust with corn starch and bread crumb. Keep it aside. Heat panini grill on high temperature. Sprinkle some oil on grill, place the veg balls and grill it by pressing lightly. The balls will spread evenly to a circular patty.
  5. Grill it till gets golden color. Keep it aside. If you don’t have panini grill, you can shallow fry on frying pan or you can use the grill to grill the patties.
  6. Cut avocado length wise and twist it so it will come out easily. Scoop with spoon and crush by using fork. Add lemon juice so it will be stay fresh. Add remaining guacamole ingredients and mix it well.
  7. Guacamole is ready, keep it aside.
  8. Ingredients for making sandwich. Grill the mini pav, apply some butter if you want.
  9. Apply Guacamole dip on one side of the pav, place a lettuce leaves, onion rings, tomato slices and cucumber slices. If you want add cheese too.
  10. Put grilled veg patties, apply guacamole mix, cover with other slices of pav. Guacamole veg patty sandwich is ready. Garnish with cherry tomatoes or serve just like that.
  11. Healthy veg sandwich is ready to be serve. Serve for breakfast or for kids lunch boxes.
