Instructions
For Fish
  1. Clean fish and wipe using paper towel. In a mixing bowl, add fish, turmeric powder, chili powder, salt, lemon juice, fresh chopped rosemary, basil leaves, garlic paste, oil, coriander & cumin powder.
  2. Gently rub the spices mix all around the fish piece. Cover it and keep aside for 1 hour or more as much possible in to fridge.
  3. Heat a griddle on medium to high heat. Sprinkle some oil on it. Place the marinaded fish on hot griddle and press it gently by rubber spatula.
  4. Let it cook for 10 minutes or once it gets brown from bottom, flip to other side. Cook and roast from both side till fish gets cook well and gets brown in color from both side.
  5. Once its done, place it on plate.
For Salad
  1. In a mixing bowl, add arugula leaves, baby spinach leaves, onion, cherry tomato, red radish, carrot, olive oil, salt, pepper powder, vinegar, feta cheese oregano and thyme. Mix all very nicely. Keep aside.
  2. On a serving plate, sprinkle some mint yogurt sauce, place some salad and top with grilled rosemary salmon and serve.
  3. Enjoy this delicious healthy rosemary salmon with arugula salad as a light lunch or dinner.
