Badushah (Balushahi)

As we all know, Indian sweets are one of the most important delicacies to celebrate any occasion. Badushai a.k.a Balushahi is one of the traditional Indian sweets that is famous across India, specifically in Southern India. This sweet is made on festivals such as Diwali and Holi. It is made from stiff dough, all purpose flour, yogurt(curd), and butter which is deep fried in oil and then soaked in sugar syrup. It is more or less similar to doughnuts however more crispy, puffy and flaky in texture. Though this sweet dish takes time to prepare, it’s worth the taste and satisfaction. It comes out best when prepared at low heat so that it cooks well.  

Pumpkin Kheer

Pumpkin is a multipurpose vegetable which can be used to prepare curries as well as sweet dishes. Earlier in my blog, I have shared pumpkin cupcakes and pumpkin curry recipe. This recipe is a sweet dish popularly known as pumpkin kheer in North India and pumpkin payasam in Southern India. Freshly grated pumpkin is cooked into milk and flavoured with nutmeg powder, cardamom powder. Garnished with pista and saffron, the pumpkin kheer tastes awesome. It’s good to use fresh pumpkin however if it’s not available, you can use canned. This is very easy recipe and can be prepared on any occasion. 

Phool Surprise

Phool Surprise is a signature dessert from chef Kunal Kapur which was showcased on MasterChef TV program. I was awestruck when I saw this program as the Phool surprise was really so beautiful and awesome. I was so impressed that I wanted to try it out, though I knew it would a tough task. After couple of attempts I was able to prepare it although its not as perfect as the actual recipe. I have also uploaded the video of the petals opening from my recipe. This recipe has four components, first one berry cheesecake, second one crispy ghevar, third one white chocolate petals and finally french vanilla & turmeric flavored custard. I have shared the Ghevar recipe separately and remaining three recipes are part of this recipe. This dessert is as delicious as beautiful. Berry cheesecake gives a sweet and sour tingling taste to otherwise sweet chocolate and custard. It could look like a daunting task however if you have patience you can certainly make this recipe and surprise your friends and family with it. Some important aspects of the recipe are mentioned in the recipe notes so please read them before you start preparing this recipe. 


Sabudana (Sago) Kheer

Sabudana (Sago) is a pearl shaped vegetarian ingredients which is used to prepare many dishes specifically to be eaten during religious fasting in India. Sabudana is used to prepare recipes like Sabudana Khichdi, Vada, Papad and Mix veg kababs or so on. I am sharing this Sabudana Kheer recipe which I learnt from my Mom, specifically prepared to be eaten during fasting in Navartri festival. Sabudana Kheer is prepared with slightly roasted Sabudana in desi ghee and cooked in milk and brown sugar( sugar). When topped with caramelized cinnamon flavored apple gives an amazing taste to this dish. You can also use this recipe as dessert for your get together and parties. sabudana-sago-kheer_12

Egg-less Pumpkin Cupcake

Pumpkin cupcake is all time favorite of my kids. These are perfect treat for kids. Super moist, fluffy and flavorful pumpkin cupcakes are very delicious. This recipe is egg-less variation cupcake for those people who don’t eat egg. Instead of egg I have used egg replacer which is available in grocery stores. For people who eat egg can replace it with egg. These cupcakes are decorated with tangy and sweet yogurt base frosting, you can use cream cheese instead of hung curd if you like it.

Tandoori Tangdi 65

Tandoori Tangdi 65 is a variation of original recipe of chicken 65. Generally chicken 65 is prepared using deep fried chicken with 65 spices however if you don’t want to deep fry the chicken, you can use this recipe to prepare a grilled chicken 65. The recipe came out pretty well without having to deep fry the chicken. Tandoori is basically chicken marinated with yogurt, tandoori masala and spices for over night and grilled into clay oven. Roasted chicken into clay oven gives a authentic flavor and taste but you can make them into electric oven. This recipe has long passive time so you need to plan ahead.The chicken requires about marination for 6-7 hours however overnight would be best. You can adjust the spiciness based on your taste. You can also use leftover tandoori chicken for this recipe.

Non-Fried Veg Tofu Manchurian Dry

Vegetable Tofu Manchurian is an Indo-Chinese dish. It is a very flavorful, tangy and sweet & sour dish which everyone loves. Generally Manchurian balls are deep fried however this recipe tries a roasted Manchurian ball which gives exactly the same flavor and texture. The grated vegetables, bell peppers and tofu tiny balls, flavored with ginger-garlic and coated with varieties of sauce makes it delightful recipe. I have used Appam pan to roast the vegetable tofu balls however if you don’t have Appam pan you can either use any pan to roast for even bake it in oven. Similar to other Manchurian recipe this can either dry Manchurian or with gravy. Gravy Manchurian goes very well with Chinese fried rice or just plain rice. Veg Pizza Pav (Dinner Roll)

Pav is an Indian bread which is used in making many street foods such as dabeli, pav bhaji, vada pav and many more. Making pav is easy and made with all purpose flour (maida) or refined wheat flour. Other ingredients include salt, milk, yeast and butter. Making pav is simple & easy however it is very important to prepare a right dough mix, dough rising and baking time. You could easily find pav (dinner roll) in supermarkets however making fresh pav at home always tastes awesome. This recipe is made with all purpose flour but you can make it using wheat flour as well. Veggie pizza pav sound interesting, isn’t? The same pav stuffed with veggies flavored with pizza seasoning. This is perfect for lunchboxes or after school snacks for kids. Pav is all time kids favorite and pizza pav would be a delicious twist to original pav. If you don’t want to make pizza pav, you could just make simple pav.
