Oven Roasted Tandoori Chicken

Tandoori chicken aka chicken kabab is one of the popular non-veg appetizer which everybody loves. It is a starter recipe, prepared with chicken and mix of spices. The chicken is marinated with special Indian spices and grilled into clay tandoor to prepare tandoori chicken. Grilled chicken in clay tandoor or on coal grill gives a nice aroma and smoky taste to the chicken. You can also grill it in conventional oven though it won’t have the same flavor. The grilling is very easy however a planning is required as you need to marinate the chicken either overnight or at least for 6 to 7 hours. Plan ahead if you want to enjoy your weekend with this grilled chicken.

  1. Clean chicken pieces and wipe it with kitchen towel. Slits the chicken lengthwise.
  2. Place chicken in a mixing bowl. Add 2 tsp salt, kashmiri red chili and lemon juice and rub the chicken nicely from all sides. Cover it and keep it for 25 minutes.
  3. Ingredients for Tandoori chicken....Roast the gram flour with 2 tsp oil at low to medium heat till slightly golden color. Turn off the heat and keep it aside.
  4. In a mixing bowl, add all spices, gram flour, chaat masala powder, tandoori masala powder, ginger-garlic paste, turmeric powder, paprika, kasoori methi, mint chutney, garam masala powder, and hung curd. and mix it very well.
  5. Add chicken to the spices mixture and mix it very well. Cover it and keep it in a fridge for over night for good taste. Bring the chicken to room temperature before grilling.
  6. Preheat the oven at 450 degree F. Line the baking try with aluminium foil and grease with oil. Place the marinated chicken on baking tray and first grill in a baking mode for 20-25 min. Then turn the oven to broil mode and grill the chicken till golden color. Once it done, turn off the heat. Take out roasted chicken from oven and keep it covered with aluminium foil to avoid dryness.
  7. Oven grilled tandoori chicken is ready to be served.
  8. Serve with your favorite drink or just enjoy it with green chutney.
