Pumpkin Kheer

Pumpkin is a multipurpose vegetable which can be used to prepare curries as well as sweet dishes. Earlier in my blog, I have shared pumpkin cupcakes and pumpkin curry recipe. This recipe is a sweet dish popularly known as pumpkin kheer in North India and pumpkin payasam in Southern India. Freshly grated pumpkin is cooked into milk and flavoured with nutmeg powder, cardamom powder. Garnished with pista and saffron, the pumpkin kheer tastes awesome. It’s good to use fresh pumpkin however if it’s not available, you can use canned. This is very easy recipe and can be prepared on any occasion. 

Peas Masala

Peas masala is a very famous curry in Northern part of India. Usually, peas masala is made for chaats like aloo tikki chaat, papdi chaat, samosa chaat, ragda pattice or so on. This is a very simple recipe which is made using basic ingredients like dry green peas, onion, tomato, ginger-garlic and is flavored with spices. It tastes good when it is little spicy and tangy. Peas masala can also be used as curry and goes well with jeera rice or chapatti.

Tricolor Parfait

This Tricolor Parfait recipe is inspired by the beautiful colors of the Indian Flag. This day brings a lovely childhood memory when it was celebrated in schools with flag hosting, various cultural functions and at the end of celebration sweet especially Motichoor Ladoos were distributed to every one. The recipe is prepared using mainly three ingredients using lauki (bottle gourd), sweet yogurt and sweet fine boondi. The green cardamon, rose and kewra essence gives an amazing taste to the recipe. The three layers arranged in a fancy glass container make this recipe very soothing to the eyes and appealing. Some of the process are lengthy like getting hung curd so plan ahead for those. I have separately posted the recipe for Motichoor Ladoo which is required for this recipe. However I have mentioned the ingredient for boondi here for easy reference.

Egg-less Pumpkin Cupcake

Pumpkin cupcake is all time favorite of my kids. These are perfect treat for kids. Super moist, fluffy and flavorful pumpkin cupcakes are very delicious. This recipe is egg-less variation cupcake for those people who don’t eat egg. Instead of egg I have used egg replacer which is available in grocery stores. For people who eat egg can replace it with egg. These cupcakes are decorated with tangy and sweet yogurt base frosting, you can use cream cheese instead of hung curd if you like it.

Indian Blackberry Ukadiche Modak

Ukadiche modak is a delicious traditional Maharashtrian delicacy which is made during Ganesh puja to worship Lord Ganesha. Modaks are made with steamed rice flour shells filled with filling made from freshly grated coconut, jaggery, nuts, flavored with cardamom powder and nutmeg. For this recipe adding Indian blackberry a.k.a. jamun puree to rice flour gave a beautiful color to the traditional modaks. The most important aspect of making modaks is getting the perfect shape which is done by making rice flour petals and requires some practice before you can get perfection. Chicken Appam Potli

Appam is a popular dish in south India, specifically in Kerala. This recipe is made with rice, fermented using yeast. It’s an easy recipe to prepare and generally served with either vegetable stew, chicken curry or egg curry. To prepare this dish you would need a special Appam pan generally available in Indian stores. I have add a little twist by stuffing the Appam with a chicken filling and giving it a potli shape. For the side, I prepared the slightly sweetened vegetable tomato stew. The taste turned out to be pretty awesome and the potli shape made it look more appetizing. You can also make veg colored Appam using spinach, carrot and beetroot puree.

Green Egg Curry

Egg curry is a simple and easy recipe however  there are many variations. Green egg curry is slightly different then normal.  Green egg curry prepared using baby spinach, corn and Indian spices. Boiled roasted eggs in to spinach and tomato green curry gives a nice color compliment to the dish and taste delicious. Egg curry goes very well with rice or paratha or naan. This curry recipe can be used for paneer or tofu.

Samosa Chaat

Mouthwatering Samosa chaat is a very famous north Indian street food. We love chaats and there are variety of chaats you could find in India which look very tempting and taste awesome. To make samosa chaat you will need samosas, for which you can find the recipe on my website (samosa recipe here). The crushed samosa is served with dry green peas or yellow peas masala along with sweet tamarind and mint chutney. Chatpata chaat is loved by everyone. It is easy to prepare at home and gives great satisfaction to your taste buds.
