Phool Surprise

Phool Surprise is a signature dessert from chef Kunal Kapur which was showcased on MasterChef TV program. I was awestruck when I saw this program as the Phool surprise was really so beautiful and awesome. I was so impressed that I wanted to try it out, though I knew it would a tough task. After couple of attempts I was able to prepare it although its not as perfect as the actual recipe. I have also uploaded the video of the petals opening from my recipe. This recipe has four components, first one berry cheesecake, second one crispy ghevar, third one white chocolate petals and finally french vanilla & turmeric flavored custard. I have shared the Ghevar recipe separately and remaining three recipes are part of this recipe. This dessert is as delicious as beautiful. Berry cheesecake gives a sweet and sour tingling taste to otherwise sweet chocolate and custard. It could look like a daunting task however if you have patience you can certainly make this recipe and surprise your friends and family with it. Some important aspects of the recipe are mentioned in the recipe notes so please read them before you start preparing this recipe. 


Watermelon Strawberry Drink

Watermelon is a seasonal fruit available during summer and very good to avoid dehydration. My family loves watermelon in all forms either eating as fresh cut fruit or juice. This recipe is a blend of watermelon and strawberry added with some lemon juice and spices. This refreshing drink is perfect for hot summer weather and give you a big relief from the hot weather and keeps you hydrated. This lovely naturally red color drink is very simple to make, although the sweetness of fruit is more than enough but if you wish you could add either sugar or honey to complement the sweetness.


Fruity Kala Khatta (Chuski)

Kala Khatta is a tangy sweet syrup which is poured on the crushed ice to make a dish called Gola. It’s like a ice candy and enjoyed by licking it. It is also called Chuski. Kala khatta is made from Indian blackberry (Jamun) which is generally available in frozen form in Indian grocery stores. You can also use fresh Jamun if available. You can also make it more flavorful by adding additional fruits to it like watermelon and raw mango. This would give a refreshing feel to your taste buds.  Beat the heat this summer while indulging in this tangy refreshing taste.
