Rosemary Wheat Amaranth Crackers

Crackers are really great tea time snacks and also goes very well with either hummus or some kind of similar dip. There are plenty of crackers available in grocery stores with different flavors however making it fresh at home has it’s own charm. This recipe uses wheat and amaranth flour with fresh rosemary as ingredients. The rosemary aroma while baking is so soothing and relaxing. There are varieties of recipes which one can make using Chicken. Different states in India have different chicken masala flavor. This recipe preparation is specifically based on the one which is used in Northern part of India. For this recipe chicken is roasted and cooked in a pan and then mixed with beetroot & tomato based gravy. Using whole spices in the preparation gives awesome garam masala flavor. Chicken masala goes well with plain rice, jeera rice, paratha, naan or phulka. We all loved this recipe, even kids too as I did not make it very spicy. Barley Minestrone Soup

Minestrone soup recipe is an Italian soup recipe which is prepared with ingredients like chicken, vegetable, beans, pasta or grain like barley or Quinoa. Chicken Breast Roll

Chicken breast roll is prepared using sliced chicken breasts, spinach and mushroom as main ingredients. Generally the chicken is stuffed in tortillas or something similar, however this recipe rolls the filling inside the chicken. Chicken Appam Potli

Appam is a popular dish in south India, specifically in Kerala. This recipe is made with rice, fermented using yeast. It’s an easy recipe to prepare and generally served with either vegetable stew, chicken curry or egg curry. To prepare this dish you would need a special Appam pan generally available in Indian stores. I have add a little twist by stuffing the Appam with a chicken filling and giving it a potli shape. For the side, I prepared the slightly sweetened vegetable tomato stew. The taste turned out to be pretty awesome and the potli shape made it look more appetizing. You can also make veg colored Appam using spinach, carrot and beetroot puree.

Triangle Namkeen

Triangle namkeen is one of the popular snacks in Northern part of India. Generally it is prepared during festival like Holi or Diwali. This crispy and crunchy snack is made with all purpose flour, rava, ghee, spices and deep fried in oil. This is a very nice complement with tea or coffee. It is super easy to make and can be stored in a air tight container for 2 to 3 weeks. Namkeen is super hit in my family and I am sure you and your family would also love it 🙂
