Black beans Vegetable Soup

Black beans vegetable soup is nice starter recipe and can be prepared in short time. During cold weather it goes very well with warm garlic bread either for lunch or dinner.

Ingredients
Instructions
  1. Ingredients for the soup. Wash and cut the all vegetables and keep it aside. You can add any of your favorite vegetables in it.
  2. Heat oil in a pan, add bay leave, garlic, saute until slightly golden color. Add onion and salt to taste, saute for 2 minutes or till slightly golden color.
  3. Add all chopped vegetables and grated gooseberry in to it. Cook for 5 minutes at medium heat.
  4. Add soaked beans, tomato and saute for 2 minutes. Add black pepper, oregano, chili flakes, Basil leave, celery or celery salt, saute for 2 minutes.
  5. Add 2-1/2 cup water or vegetable stock in to it. Close the cooker lid, cook till 3 whistles at medium heat.
  6. Let it cool down naturally. At last add honey. Mix it nicely.
  7. Serve hot with corn chips or bread.
