Achaari Kathal dry

Jack fruit, also known as “Kathal” in hindi, is generally available during summer season. Raw Jack fruit is used to prepare varieties of recipes like curry, dum, kofta, dry dish as well as pickle. Ripe Jack fruit seeds are used as fruits known as Koa in Northern part of India. This recipe is prepared using raw Jackfruit which I found in supermarket. In our childhood we used to carry this in lunch with Poori, one of the favorite Mom’s dish. To prepare this curry, boiled Jackfruit is flavored with achaari masala which gives a tingling taste to it. Be careful while cutting the Jackfruit as it is little tough due to it’s sticky nature, apply oil on your palm and knife before you start cutting. Achaari kathal is a very tasty dish and goes really well with roti, poori, paratha and plain rice. Earlier I have shared kathal dum recipe if you would like to try that.

Raw Kathal ( Jackfruit) Dum

Kathal (Jackfruit) can be used as vegetable when it’s raw or as fruit when it gets riped. In Northern part of India people mostly use it as vegetable however in South mostly people use it as fruit. Raw Jackfruit can be used to prepare variety of dishes like dry, curry or kofta. Raw Jackfruit dishes are my favorite and I have been always looking to find fresh Jackfruit, however in many of my attempts I failed to find the right one to make proper vegetable dish. Cutting raw Jackfruit requires some skills as it is very sticky, my Mom used oil to grease her palm and knife while cutting the kathal. For this recipe I have used the canned  raw Jackfruit which is available in Indian grocery stores which makes it easier as it is already cleaned and cut. I am sharing this recipe from my Mom who used to make it amazingly delicious. Boiled and roasted kathal cooked in onion and tomato gravy flavored with garam masala powder, nutmeg powder and spices. This simple curry is a great compliment with steamed rice or roti.

 

Tandoori Gobhi

As you hear the sound Tandoori, it gives you a spicy, tangy and mouthwatering sensation. There are varieties of non-veg based Tandoori recipes however Tandoori Gobhi is vegetarian recipe and is an excellent starter or snacks item. This recipe is prepared using cauliflower florets marinated in hung curd, tandoori masala and other spices and grilled in oven. If cooked in clay based oven, it would have an amazing aroma and smoky flavor. You can also cook it in gas based oven or on griddle. Stuffed Red Chili Pickle

Red Chili … as the name sounds it’s hot. In northern part of India, red chili is available during the winter season and mostly used to make the pickle (achar in hindi). I had been searching for this kind of chili here and finally found in Walmart store. Although this is not exactly the same type which is generally used however pretty close. I have seen my grand mother and mother making this pickle during my childhood. I am really glad to share this traditional recipe from my Mom. This pickle is made from mixture of various spices and mustard oil. Mustard oil give a authentic taste to the Pickles. There are certain important steps in making this pickle, one is that red chili needs to be dried up in sun light for at least 3-4 hrs. so that the moisture contents goes away and once again after preparing the pickle it needs to be left in sunlight for at least a week in a glass container. This pickle could be little spicy however goes very well with Paratha or side of any meal especially rice and yellow daal or khichadi. Hope you would enjoy this pickle as part of your meal. Red Chili_

Achari Murgh

Achari Murgh (Chicken) is a very flavorful delicious dish popular in Northern part of India. Achari is nothing but pickle spices (which is easily available in Indian grocery store). Chicken marinated with achari masala, yogurt and cooked into onion and tomato gravy gives a tangy taste to this recipe. Cooking this dish in mustard oil gives a nice authentic taste to dish however if you don’t want to use mustard oil, you can use other cooking oil. Achari Murgh goes well with jeera rice, plain rice, roti or naan. This is a very easy recipe to prepare.

Tandoori Tangdi 65

Tandoori Tangdi 65 is a variation of original recipe of chicken 65. Generally chicken 65 is prepared using deep fried chicken with 65 spices however if you don’t want to deep fry the chicken, you can use this recipe to prepare a grilled chicken 65. The recipe came out pretty well without having to deep fry the chicken. Tandoori is basically chicken marinated with yogurt, tandoori masala and spices for over night and grilled into clay oven. Roasted chicken into clay oven gives a authentic flavor and taste but you can make them into electric oven. This recipe has long passive time so you need to plan ahead.The chicken requires about marination for 6-7 hours however overnight would be best. You can adjust the spiciness based on your taste. You can also use leftover tandoori chicken for this recipe.

Tandoori Salmon

Salmon fish marinated with aromatic Indian tandoori spices and grilled either in to clay tandoor or oven is really a great dish. Salmon fish has less bones and its really very tasty and healthy. Flavored tandoori salmon recipe is perfect non vegetarian meal for summer outdoor grilling. When served with yogurt mint chutney and green salad it makes it more delicious.

Tilapia Fish Curry

Tilapia fish curry recipe is prepared using fresh Tilapia fish. Tilapia fish is very tasty and had very less fish-bones. You could also make fish kabab or grilled fish from this. Fish curry are of various varieties and in this recipe I have given the prepared which is generally using in the northern part of India. Fresh fish is available in Asian markets, if fresh is not available you could also use the frozen fish. This recipe used mustard oil for preparation as that gives a authentic taste to the fish. You could use other oils, if not available.
