Bottle gourd Rice

Bottle gourd is also known as “Lauki” in northern India. It is very rich in vitamins and minerals and also very low on calories. Generally used to make as dry side dish, however this recipe is specially made in northeastern India as a rice delicacy.

Main Dish
  1. Main Ingredients, Peel the bottle gourd and fine chopped it. Rinse the rice and soak it in water for 5 minutes.
  2. In a pressure cooker, add 3 cup of water, rice, chopped bottle gourd and salt to taste. Initially keep the flame at high and once pressure is build reduce the flame to medium and cook it until 2 cooker whistle (approximately 8 minutes). Once it is cooked, make sure rice is cooked properly. Add 1/2 cup milk to the rice. Adjust the consistency by adding more milk if it's very thick.
Seasoning & Garnishing
  1. Heat Ghee in a small pan, add cumin seed. When it starts crackling, add Green Chili and asafoetida (Hing). Once chili gets golden brown, add to the rice mixture and mix it well.
  2. Garnish it with coriander leaves and pomegranate seeds and serve it warm.
