Fafda

Fafda is a very popular traditional Gujarati snacks. The recipe is made of gram flour and spices. The crunchy Fafda, Jalebi and roasted chili is a awesome snacks combination and generally it is served to guest in the same manner. Although not very hard but recipe requires some practice so don’t get disheartened when you are trying first time. It would need some practice to get it going.  Generally Fafda is deep fried however I also tried baking the same and that too came out pretty tasty.

Ingredients

  1. Fafda Ingredients.
  2. In a mixing bowl, add all dry ingredients and mix it well. Dissolve the papad kharo in to 1/4 cup water.
  3. Make a smooth dough by adding small amount of water periodically to the mixture.
  4. Grease some oil on palm and knead the dough for about 4 to 5 minutes until dough gets very smooth and shiny. Once its done, cover it and keep it aside for 5 minutes.
  5. Make small size round dough ball and give it an oval shape as shown in picture.
  6. This is an important step to make Fafda. You need to apply pressure from using your palm just below the thumb. Take one oval shape ball on a wooden surface and apply pressure using your palm and drag the dough to stretch it as long and thin possible.
  7. You would need a thin blade knife to take out the Fafda strip from the wooden surface. Hold the knife with using both hand and scratch it below the Fafda Strip in one go and the strip will come out.
  8. Make all Fafda following the same process. Keep them on tissue paper.
  9. To make fried Fafda, heat oil in a frying pan at medium heat. Once its hot, drop raw fafda into oil and fry from both side until golden color.
  10. Once its done, remove from hot oil and place it on paper towel. Let it cool down.
  11. Fried Fafda is ready to be served.
  12. To make baked Fafda, preheat the oven at 325 degree F. Place the raw Fafda on a baking tray and bake it for about 7 to 8 minutes till slightly golden color.
  13. Once its done, remove it from oven and place it on a paper towel. let it cool down.
  14. Baked Fafda is ready to be served.
  15. Both kind of Fafda are very crunchy and tasty. Baked one has it's own benefit of less oil.
  16. Fafda is not complete without chili. Slit green chili in to center and roast it with very little oil, lemon juice and salt. Once its done turn off the heat.
  17. Serve Fafda with jalebi & chili.
  18. Fafda can be stored in air tight container for a week.
