Pista Sandesh

Sandesh is a very famous Bengali delicacy dessert. It is a very soft dessert which melts in mouth while eating. On the occasion of Rakha Bandan, sharing this recipe for all sisters who would want to try it. The recipe is very easy to prepare and could be prepared on any occasion. It is prepared using home made paneer and filled with kesar mava and strawberry sauce. For presentation, I have used melted chocolate, whipping cream and some sugar candy and along with watermelon & blueberry. You can decorate it in your own way. Tradionally there is no filling in Sandesh however in this recipe the strawberry sauce and mava filling makes sandesh more rich and yummy.

Ingredients

Instructions
  1. Boil 4 cup of milk in a pan at medium heat. Once it comes to boil, reduce the heat to low. Add little by little lemon juice and stir slowly. When it is fully curdle, turn off the heat. Add some ice cube and stir.
  2. Pour the curdle milk in muslin cloth and drain all water from paneer. Pour some cold water on paneer and squeeze all liquid from paneer. Tie the muslin cloth with rubber band. Wrap it in a clean kitchen towel and keep it into fridge for 50-60 minutes. Let all the water get dried from the paneer.
  3. Take mava, kesar, kewra essence and 2 tbsp sugar in microwave bowl. Microwave it about 30 sec till it is melted. Mix it well and keep it aside to cool down.
  4. To make strawberry sauce, cut the strawberry and bland it in a blander with 2 tbsp sugar to make a smooth puree. Boil the puree in a pan at medium heat until it gets to sauce consistency. Turn off the heat and keep it aside to cool down.
  5. Remove the paneer from muslin cloth.
  6. Place the paneer on silicone mat or wooden surface. Knead the paneer dough using palm very lightly. Ensure that the paneer granules are broken. Please don't knead it too much or too hard.
  7. Add powder sugar, pista powder, green cardamom powder, kewra & rose essence in to it and mix very lightly.
  8. Place the dough in microwave bowl, microwave it for 2 minutes. Every 30 sec, mix using rubber spatula. The mixture should be of dough consistency. Let it cool down.
  9. Make 10 equal size round ball. Place the paneer ball in to a heart shape cookie cutter. Flatten the dough using finger to give a heart shape. Remove it from mold very carefully. Make all heart shape Sandesh following the same process. Once it done, keep it in fridge for 1/2 an hour. You can use any shape whichever you like.
  10. After that, take one heart shape Sandesh in a plate, apply some mava mixture and some strawberry sauce on it. Cover it with other piece of sandesh like a sandwich.
  11. Make all Sandesh following the same process. Place it in refrigerator for some time to get set before you start decorating. Sandesh is ready to be served at this stage. Next steps are for presentation.
  12. Take the chocolate chips in a microwavable bowl and melt it in microwave for 30 sec. Every 10 sec pause the microwave and mix the chocolate. Bring the chocolate mix to room temperature by stirring it using spatula. Fill the chocolate mix in small ziplock bag and give a small cut at bottom or piping bag. Decorate sandesh with chocolate. Once it done, keep in to fridge to set for 20 minutes.
  13. Fill the whipped cream in piping bag and decorate it on top side. Put some sugar candy on it. Decorate with strawberry sauce and served with watermelon and blueberry.
  14. You could decorate the plate as you wish.
  15. Celebrate your special day with Pista Sandesh.
Recipe Notes

1. For sandesh, we need soft paneer. Adding too much vinegar or lemon juice into milk will make it hard.
