Lentil Soup

Lentil soup is a very healthy recipe for appetizer or even for light dinner. It’s made up of red lentil, however you can use any lentil to prepare this recipe. Lentil soup goes well with Focaccia Bread.

  1. Ingredients for Lentil soup. Clean red lentil with water for two-three times and soak it for overnight in water.
  2. Heat oil in a deep pan or a cooker at medium heat. Add garlic, saute it until slightly golden color. Add tomato, carrot, zucchini and saute it for 5 minutes at medium heat.
  3. Add celery salt, dry tarragon, dry rosemary, dry thyme, black pepper powder, red chili flakes and saute it for 2 minutes.
  4. Add soaked lentil, chopped parsley and vegetable stock or water.
  5. Cook in a pressure cooker for 2 whistle or in a deep pan for about 25 minutes in medium flame and check that lentil is cooked properly.
  6. Hot Lentil soup is ready. Garnish with chopped parsley. Serve with warm focaccia bread or garlic bread.
