”Happy Makara Sankranti” !!
Tilkut (sesame seeds bar) is a winter snack and is made during the festival of Makara Sankranti. People celebrate this festival in different ways in different parts of the country. In Bihar people celebrate it by taking early shower and performing puja. They eat chuda (Poha) with Dahi(Curd) with jaggrey or sugar and Tilkut laddos along with that. Tilkut is very easy to make and tastes awesome.

Ingredients

  1. Ingredients for Tilkut. This recipe is medium sweet, if you want more sweet add more jaggrey.
  2. Dry roast the til ( sesame seeds) at medium heat until it starts puffing (in about 5-6 minutes) . Stir continuously to avoid it getting burnt. Turn off the heat. Immediately, transfer the roasted Til (Sesame seeds) into a plate. Let it cool.
  3. Grind the roasted sesame in a food processor for few sec. Keep it aside.
  4. In a pan, add 1/4 cup water and jaggrey. Stir it and let it boil at medium heat. Boil it until it starts caramelizing and forms a ball when you add a drop of syrup in cold water.
  5. Add sesame seeds, ghee, almond and cardamom powder.
  6. Mix all together very well. Turn off the heat.
  7. Spread it in a greased plate with rubber spatula evenly. Let it cool for 15-20 minutes.
  8. Cut it in a round or triangle shape, or shape it into a round ladoo.
  9. Cut all pieces and arrange in a serving plate. Tilkut can be store in an air tight container for a months.
  10. Enjoy as snacks any time, but beware of calories.
Recipe Notes

1. Til should be nicely roasted but not burn.

2. Jaggrey syrup should be very stringy, to check the syrup, drop the syrup into cold water; it should form a ball in the water.
