Vegetable Tehari

Tehari is a colorful and delicious rice dish very similar to veg pulao. This dish is very popular in Northern part of India specially in Uttar Pradesh. This is a very easy recipe and can be prepared when you are in rush. The rice is mixed with chopped vegetables and cooked together with aromatic spices. You can add any vegetables of your choice but generally cauliflower, potatoes, beans, tomatoes, peas and carrots provide an amazing taste. It is served with raita, or curd and papad. Enjoy this either during rush hours or during the weekends for a light lunch/dinner.

Ingredients

  1. Clean and cut all veggies. Keep them aside. You can add potatoes if you like.
  2. Clean basmati rice with water two to three times. Soak it into water for 15-20 minutes.
  3. Heat oil in a kadhai or big pan at medium heat. Add cumin seeds and bay leaves. Once cumin seeds gets brown in color. Add cinnamon stick, cloves, and black pepper corns. Saute it for few sec. Add onion, ginger-garlic and little salt in to it. Saute it till onion gets slightly golden in color.
  4. Add veggies, red chili powder and turmeric powder. Saute the veggies for 2 minutes.
  5. Add soaked rice in to veggies and mix lightly.
  6. Add 4-1/3 cups of water, garam masala and salt. Once you add salt, taste the water it should be salty.
  7. Transfer it into rice cooker and set the timer. If you want to make it into pot, just cover it and let it cook at low to medium heat till rice absorb all water and gets cooked properly. Once its done, turn off the heat, let it be covered for 10-15 minutes.
  8. Flavorful vegetable Tehari is ready to be served.
  9. Serve it hot with raita or plain curd. This can be packed for your kids lunch boxes.
