Fruit Pancake Paniyaram( Kids Lunch Idea)

Fruit Pancake Paniyaram is healthy and easy to make for the kids school lunch. This is easy to fit into the lunch box. My second grader loves this recipe and asks for more after returning from school.

Instructions
  1. Ingredients for Pan cake paniyaram. You can add your kids favorite fruits and dry fruits.
  2. Peel the apple, banana and grate them.
  3. In a mixing bowl, mix pancake flour and brown sugar with lukewarm milk and make a medium thick batter, cover it and keep it aside for 5 minutes. Pancake mix is available in grocery stores . ( You can also make it at home, in a half cup multi grain wheat flour add 1/4 tsp baking soda.)
  4. After 5 minutes, mix grated apple and banana in to the batter.
  5. At last add egg and mix well. If you don't want to add egg just skip it. Now pancake batter is ready.
  6. Heat paniyaram pan on stove at medium heat. Once it hot enough pour the pancake batter in to paniyaram pan cavities. Do not fill it till top. Leave some space for the pancakes to rise.
  7. Cover it and let it cook for 6 minutes at low to medium heat.
  8. Flip it using by fork and let it cook for another 3 minutes.
  9. Fruit pancake paniyarams are ready to be served.
  10. This recipe is a favorite for kids. Pack it for lunch with maple syrup.
