Veggie Quinoa Uttapam

Uttapam is a well know South Indian breakfast dish which belongs to the dosa family. Generally most of the dosa’s are thin and crispy however; uttapam is thick and soft similar to pancakes. The batter for preparing any kind of dosa is the same however; the cooking process is different for different kinds of dosas. Uttapam is generally topped with vegetables like onions, tomatos and carrots and served with coconut chutney and sambhar. The batter for regular uttapam is prepared using 1 cup of urad daal and 3 cups of idli rice, however; in this recipe I have used red rice, quinoa, yellow moog daal and red poha to prepare the batter. This is slightly different than traditional uttapam and gives a different taste and texture to it. You can add your favorite veggies and the healthy uttapam is a perfect breakfast and after school snacks for kids.

Masala Bhaat

Masala Bhaat is a Maharashtrian recipe prepared using basmati rice, mix vegetables and spiced with Goda Masala. Goda Masala is a special Maharashtrian spice mix which gives an authentic flavor to the recipe. It seems Maharashtrian wedding is considered incomplete without masala bhaat which indicates that how much people like it. In a way you can say it’s like a veg pulao, however it is more spicy and have it’s own taste. You could add vegetables of your choices in it. I learnt this recipe from one of my family friend’s Mom. She makes it so delicious that once you start eating, you can’t stop. Masala bhaat goes very well with maharastrian kadhi or curd raita.Masala Bhaat_7

Avocado Dip

Avocado is a healthy stone fruit which has creamy texture. Avocado dip is super easy and tasty recipe. We need semi riped avocado for this recipe. The lemon juice and coriander leaves gives a refreshing taste to the dip and adding sour cream gives richness to the dip. If you don’t want to use sour cream, you can use same quantity of yogurt. The dip goes very well for sandwich spread as well as dip for pita chips as an appetizer. This dip is great for summer outside gatherings.Avocado Dip_1

Methi Wheat Garlic Naan (without yeast)

Naan is an Indian flat bread, made with fermented all purpose flour and roasted in clay tandoor or oven. This yummy soft & fluffy bread is famous across India, and varieties of naan are served in Indian restaurants. In my earlier post, I had shared tava garlic naan using all purpose flour. The process to make wheat methi garlic naan recipe is almost similar except for the dough preparation. This recipe is made using wheat flour and fenugreek (methi) leaves and topped with garlic, coriander leaves, kalongi (nigella seeds) and sesame seeds and roasted on stove top on tava. The texture is slightly different but is still soft and fluffy and tastes great. Naan breads generally taste great with paneer or chicken curry. The texture of the wheat naan are very close to the restaurant naan. In this recipe, I have used baking soda and baking powder but you use yeast too.

Aloo Tikki Chaat

Chaat…irresistible mouthwatering street food famous all over India. There are variety of chaat recipes and I have shared some of the in my earlier blogs like Samosa chaat, papdi chaat basket, dahi poori papdi chaat and banana oats tikki chaat. Aloo tikki chaat is made from boiled potato flavored with spices and shallow fried on pan. You would need peas masala to prepare the chaat recipe.  The chaat is topped with onion, tomato, sweet yogurt, date-tamarind and coriander-mint chutney, crushed papdi and thin sev. Spicy, sour, sweet and tangy Aloo Tikki Chaat creates a deep craving for it as soon as you hear or smell the aroma somewhere.

Raw Mango & Guava Chutney

Guava also known Amrood (in Hindi) is a seasonal fruit which could be readily available during its season all over India. This sweet & tangy mouthwatering chutney is prepared mainly using raw mango and guava, flavored with chaat masala and black salt. This delightful chutney goes very well with any Indian snacks like a cutlets, kabab, pakoras, samosa and so on.

Avocado Hummus

Hummus is a Middle Eastern side dish.  There are variety of Hummus recipes. Avocado Hummus is one of them which has Avocado creamy texture without tahini sauce. Adding all spices and Garbanzo beans (chick peas) gives a awesome taste to hummus. Avocado hummus is a nice dip or sauces for many recipes and is a healthy and easy to make side dish.

Chana Poori Masala Paani

Pani poori is a most popular mouthwatering street food.This recipe is a slight variation from the normal pani poori. The poori is made using chana for this recipe (see the Chana poori recipe) and have tried two varieties of pani one regular and other one with beetroot. The taste of this pani poori is different than regular however it’s awesome. If you like a little different taste in your pani poori, just try this out.
