Veg Pizza Pav (Dinner Roll)

Pav is an Indian bread which is used in making many street foods such as dabeli, pav bhaji, vada pav and many more. Making pav is easy and made with all purpose flour (maida) or refined wheat flour. Other ingredients include salt, milk, yeast and butter. Making pav is simple & easy however it is very important to prepare a right dough mix, dough rising and baking time. You could easily find pav (dinner roll) in supermarkets however making fresh pav at home always tastes awesome. This recipe is made with all purpose flour but you can make it using wheat flour as well. Veggie pizza pav sound interesting, isn’t? The same pav stuffed with veggies flavored with pizza seasoning. This is perfect for lunchboxes or after school snacks for kids. Pav is all time kids favorite and pizza pav would be a delicious twist to original pav. If you don’t want to make pizza pav, you could just make simple pav.

  1. In a bowl, take lukewarm milk, dry active yeast and sugar. Mix it well. Cover it and keep it aside for 15 minutes in warm place.
  2. In a big mixing bowl, add all purpose flour, salt, melted butter and thyme. Add proofed yeast mixture from above step into the bowl and knead dough either by hand or in a kneading machine at medium speed setting till make sure the dough is very sticky.
  3. Sprinkle some dry flour on a silicone mat or wooden surface. Take out dough from mixing bowl and place it on the work surface. Grease some butter on palm and knead the dough by using your palm and stretching the dough for about 10-15 minutes. Make a round ball of the dough.
  4. Grease some butter in same mixing bowl and place the dough into bowl, cover it and keep it in warm place for 2 hours for proofing the dough. It would rise to about double the original volume.
For Filling
  1. Meanwhile prepare veg pizza filling. Chop all the vegetables listed or as per your choice. Keep it aside.
  2. Heat 2 tbsp oil in a frying pan. Add pizza sauce and vegetables into it and saute it at high heat till all moisture is evaporated from the vegetables. Stir regularly and turn off the heat once done. Let it cool down.
  3. Add mozzarella cheese, pizza seasoning, pinch of salt and chili flakes and mix. Keep it aside.
Final Preparation
  1. Punch the dough and take it on work surface. Lightly knead the dough for 2-3 minutes. Divide the dough into two portion. Make 16 equal dough balls from each dough portion.
  2. Take one ball on work surface, flatten it using your finger to give a round poori shape. Make sure the center should be thicker than edges. Place some pizza seasoned veggies. Bring the edges towards the center and seal it. Make round dough ball by rolling on work surface.
  3. Grease the baking tray with butter. Make all stuffed veg pizza pav following the same process. Arrange all stuffed pav in baking tray. Cover it with clean cloth or aluminium foil for 45-50 minutes in warm place or till all dough balls rises to about double the size.
  4. Preheat an oven at 425 degree F in baking mode. Give a milk wash with soft brush on proofed pav very lightly. Sprinkle some crushed oats on it.
  5. Place the pav tray in preheated oven on middle rack and let it bake for 9-10 minutes till pav gets golden brown color on top. Please keep an eye so it does not get overcooked.
  6. Once it done, remove it from oven and let it cool. Apply some butter on top. Break it into pieces.
  7. Soft fluffy stuffed veg pizza pav are ready to be served.
  8. Serve it with sauce for kids after school as a snacks.
  9. You can store it in refrigerator.
  10. Just reheat 10 sec in microwave and enjoy.
